Marshmallow Lamb Cake

I wanted to make a cake that needed no special tools or pans AND was easy enough for the kids to help with. This was the perfect compromise! I used frostings and candies to create a cake that not only looks cute but tastes amazing!

Marshmallow Lamb Cake Ingredients

It all starts with the yellow cake and from there, you can let your creativity shine!

Yellow Cake Ingredients

  • Flour
  • Sugar
  • Baking powder
  • Salt
  • Whole milk
  • Vegetable oil
  • Butter
  • Vanilla
  • Eggs

Decorating Ingredients

  • Vanilla frosting
  • Strawberry frosting
  • Large marshmallows
  • Turbinado sugar
  • Food color
  • Black decorating icing
  • Jelly beans (or other candy to use as the nose)

How to Make Marshmallow Lamb Cake

It starts with the yellow cake for this cute and fun recipe. To make the yellow cake, preheat the oven to 350°F and prepare two 8-inch round cake pans by spraying them with nonstick spray. Then, get out your stand mixer or handheld mixer to prepare the batter.

  1. First, in a large bowl, whisk together the flour, baking powder, salt, and sugar. Set that aside.
  2. Next, place the softened butter in the bowl of a stand mixer (or a separate bowl if using a handheld mixer) and whip the butter for about a minute.
  3. Then, add the flour mixture to the butter and mix until incorporated.
  4. Finally, add the milk, oil, vanilla, and eggs, mixing on medium-high for one minute.
  5. Pour the batter into the prepared cake pans and cook for 18-22 minutes (or an inserted toothpick comes out with only a few crumbs on it, but not wet batter).
  6. Let the cakes cool at room temperature before layering and decorating them.

Decorating the Marshmallow Lamb Cake

It is simple and fun to decorate this cake, and your kids can join you in the decorating for even more fun!

  1. Place one layer of the cooled yellow cake on top of a cake stand. Use the strawberry frosting to cover the cake. Place the other cake layer on top. Then, cover the entire cake with the vanilla frosting.
  2. Start placing marshmallows around the cake. It is best to work with a freshly frosted cake so the marshmallows can “stick” to the cake. Leave a small section on the lower portion of the cake without marshmallows, as this is where the lamb’s face will be.
  3. Take turbinado sugar and place it in a small plastic baggy. Add in a teaspoon of natural food color powder and then seal the baggy. Toss the sugar and the powder around until it is fully coated and pink.
  4. Use a drop of remaining frosting to add to the top of a marshmallow and dip it into the pink sanding sugar. Set it on the outer edge of the cake near the center, where an ear would be. Repeat this for the other ear.
  5. Using the black frosting, pipe out eyes, and then a mouth. Press one pink jelly bean (or whatever piece of candy you are using) where the nose should be.
  6. Fill in with more marshmallows as needed.

Ingredients

YELLOW CAKE

  • 2 1/4 cups (281g) all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups (300g) granulated sugar
  • 1/2 cup (113g) butter, softened
  • 1 1/4 cups (306g) whole milk
  • 1/8 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 3 large eggs, room temperature

DECORATING INGREDIENTS

  • Vanilla frosting
  • Strawberry frosting
  • Large marshmallows
  • Turbinado sugar
  • Food color
  • Black decorating icing
  • Jelly beans (or other candy to use as the nose)

Instructions

YELLOW CAKE

  • Preheat oven to 350°F.
  • In a large bowl, whisk together the flour, baking powder, salt, and sugar. Set aside.
  • Place the softened butter in the bowl of a stand mixer (or other bowl if using a handheld mixer) and whip for about a minute.
  • Add the flour mixture to the butter and mix until incorporated.
  • Add milk, oil, vanilla, and eggs and mix on medium-high for one minute.
  • Pour batter into prepared cake pans.
  • Bake for 18-22 minutes. The cake is done when it springs back when touched or an inserted toothpick is removed mostly clean (but not any wet batter on it). Let the cakes cool before decorating.

  • Place one layer of the cooled yellow cake on top of a cake stand. Use the strawberry frosting to cover the cake.
