Raspberry Buttercream

I had visions people. Visions of chocolate and raspberry and hearts galore.

Ingredients

Raspberry Buttercream

  • 2 sticks room temperature butter
  • 1/2 c raspberry jam
  • 2 tsp. water
  • 4 c powder sugar

Chocolate Glaze

  • 1 c semi-sweet chocolate I used chips
  • 6 tbsp. butter

Instructions

For Raspberry Buttercream:

  • Combine powder sugar, butter, jam and water in stand mixer. Start on low for 30 seconds, then turn to medium and mix until fully combined, about 2 minutes.

For Chocolate Glaze:

  • Place butter and chocolate into a small saucepan over low heat. Stir until chocolate is melted and butter is incorporated. Remove from heat and allow to cool slightly

Chocolate Chocolate Raspberry CakeNormally when I think of a cake I sketch it out… fine tune any weird ideas and thoughts… and go for it.

I totally went for it.

While this cake turned out nothing like I had envisioned, I really like the idea behind it.

I carved out a few tunnels to make a surprise-inside, then I went back and filled those tunnels with buttercream.

I think this is one of the ugliest cakes I have ever made. Ha!

The combination of chocolate and raspberry has been around forever and there is a good reason… its stinkin awesome.  I especially love the flavors of the rich chocolate cake with the sweet raspberry frosting covered in the semi-sweet chocolate glaze.

I used this recipe for the chocolate cake.  Its tried and true and fabulous and you will love it!

I read the other comments and I have to echo what everyone else said, I love this cake it’s lovely and in fact I like it even more than the white one, its easier to see the hearts :). I really hope you put the instructions for the hearts soon!

  2. Ok so when I first saw this on Pinterest I totally pinned it right away, then I looked some more and decided that I would have to click to figure out just HOW you made such a super cute cake. Then as the page was loading I decided that what I really needed to do was find out if you sell said delishcious looking concoction. I am just in awe at the glorious-ness of your creation. Oh and BTW I totally agree that the choco raspberry combination is to die for. Still can’t believe that you are less than ecstatic about this cake. It is beautiful!

There is only one explanation for your temp insanity related to your dislike of this truly beautiful cake – This pregnancy has effected your brain and you are not seeing the same things as everyone else because this might be among my most favorite “surprise inside cakes”. It is sweet and whimiscal and unexpected. I love the three hearts – four would have been too many and two not enough. The only cure for pregnancy brain (besides actually giving birth) is to sit down and eat large quanities of the “offending” cake. Surely, the sugar rush will fix everything – it generally does – pregnant or not! 🙂

  4. I cannot believe a person of such talent and skill would believe that this cake is not worthy of leaving in-structions for creating the cake so that we could make one for our sweethearts on Valentines Day!

    One of the things I believe God gave me was good taste……this cake is both beautiful and fun….that in addition to the best combination of flavours one can have makes this cake one of the most wonderful creations I have ever see.

  5. I saw the pic and clicked looking for the recipe – I wanna make that cake w the 3 hearts inside! I wish youd explain to us what you *thought* it was gonna look like, cos if its 3 teeny meany little hearts forget it! Thank you so much for sharing I wanted a heart inside cake but the hero one we all know is too much for me to attempt just now. 3 raspberry hearts is juuuuuuuuuuuust right 🙂

  6. The cake is GEORGEOUS and I was quite surprised that you thought it was such a disaster! Just be sure we get to see the tutorial before Valentine’s Day!
    As I always tell my 27 year old daughter (especially during bathing suit season), YOU are the only one noticing all those “flaws.” Everyone else takes a quick look, notices you’re (very!) pretty, and gets on with their day !

    I am really excited because yesterday I made 36 chocolate favors for a fundraiser tomorrow night (haven’t had time to make any in years), and I think people are going to be amazed! I used molds I’ve had tucked away to make chocolate tickets (it’s a theater outing) and comedy masks, then brushed them with edible gold to show the details. They really turned out beautiful, which always makes me feel great!

  7. I can understand bemoaning it when it didn’t turn out like you had planned but us, we just see it in all it’s glory. Those hearts are wonderful! I actually thought you didn’t like the chocolate on the outside, that part seemed a little weird, but the hearts are perfect!

  8. I was reading your post, and yet the pictures were not matching the post!! Are you kidding me??! That cakes looks awesome especially with those hearts!! I guess when one’s a perfectionist, it’s expected. But geez, girl! that cake is gorgeous!
