I recently went to Kansas City for a photography workshop with the world famous Helene Dujardin.

Much to my surprise, two sweet and beautiful women greeted me the moment I walked through the door.  I walked right into a big hug!

That big hug was from Kathy Moore and Roxanne Wyss.  There ladies are quite possibly the nicest people I have ever had the pleasure of meeting.  Although this was only the second time we were blessed to be spending time together, it truly felt like we had been friends for a lifetime.

Not only are Kathy and Roxanne giving , thoughtful, and kind, but they are accomplished authors!

I decided to try their red velvet cupcakes with my favorite ever cream cheese frosting.

Their recipe is wonderful, delicious, and SO easy!  Having from scratch red velvet cupcakes in just minutes is such a treat!

Quite literally actually.

Red Velvet Cupcakes


  • 1 1/4 cups AP Flour
  • 4 tsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1 egg at room temperature
  • 3/4 cup vegetable oil
  • 1 tbsp red food coloring
  • 1/2 tsp vanilla extract
  • 1/2 cup butermilk
  • 1/2 tsp white vinegar


  1. In a small bowl, whisk together flour, cocoa, baking soda, baking powder, and salt. Set aside.
  2. In a large bowl, using an electric mixer on medium high speed, beat sugar, egg and oil for 1 to 2 minutes or until fluffy.
  3. Beat in food coloring and vanilla.
  4. Add flour mixture alternatively with buttermilk, making three additions of flour and two of buttermilk and beating on low speed until smooth.
  5. Stir in vinegar.
  6. If desired, place cupcake liners in Babycakes maker.
  7. Fill each well with about 1 1/2 tbsp batter.
  8. Bake for 6 to 8 minutes or until a tester inserted in the center of the cupcake comes out clean.
  9. Transfer cupcakes to a wire rack to cool.
  10. Repeat with remaining batter.
  11. Frost with cream cheese frosting.

    My latest gift came from my very pregnant best friend!!! I’d spent the last 3 months planning her baby shower and have had to do without any non-essentials shopping in order to budget for it. In the meantime, I’d been building up a “wish list” on Pinterest of all the kitchen items I wished for (and though I didn’t say it this way, would be able to start saving for once the shower was done). Well, when I flew up to SF (yes, it was all planned long distance!) to start the assembly, she presented me with a icecream waffle cone maker….#1 on my wish list. I haven’t been able to use it yet, but I absolutely can not wait!!! Best friends are the best gifters xxox

    The last gift I received was wonderful -it was a trip to my hometown in Florida, gifted to me by my sister. It was so good to be home again, even if I am still a little homesick. I have been gone for almost ten years but St. Augustine will always be home and I do hope to move back someday.

    The other night my friend gave me a set of silicone cupcake liners that are shaped like little tea cups! She knows me oh too well and my love of both cupcakes and coffee mugs!
