Ingredients

  • 1 cup 2 sticks butter at room temp
  • 1 1/2 cups sugar
  • 2 tablespoons fresh lemon zest
  • 2 1/2 cups AP flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 eggs
  • 1/3 cup cup fresh lemon juice
  • 1 cup buttermilk

Strawberry Buttercream

  • 1 cup 2 sticks butter, softened
  • 5 cups powder sugar
  • 2 tablespoons whole milk
  • 2 -4 large strawberries chopped

Instructions

  • Heat oven to 350 and prepare two 9-inch round baking pans.
  • In bowl of stand mixer fitted with whisk attachment, place the butter, sugar and lemon zest. Beat until light and fluffy.
  • In a separate bowl, mix together dry ingredients and set aside.
  • With the mixer on low speed, add the eggs, one at a time, combining thoroughly in between. With the mixer still running, add the lemon juice. (batter will look curdled, but its not)
  • Add one third of the dry ingredients and 1/2 cup of the buttermilk. Mix, then stop and scrape the sides of the bowl. Repeat, adding another third of the dry ingredients and the remaining 1/2 cup buttermilk. Mix, then stop and scrape. Add the remaining third of the dry ingredients and mix until completely combined and the batter is light and fluffy.
  • Divide the batter evenly between the prepared pans.
  • Bake for 25-30 minutes, or until an inserted toothpick comes out clean. Let the cakes cool before removing from the pans.

Strawberry Buttercream

  • Combine butter and powder sugar in a large bowl or standing mixer. Mix together on medium speed until pale and fluffy, about 3 minutes. Add in the milk and strawberries and mix on high speed until the frosting is very fluffy and pale pink in color, with flecks of strawberry.

  1. My day is going good! I’m at work, coffee in hand, and reading your awesome blog! Super excited about the giveaway! Did I mention I’m hungry? 😉

  2. My day is going surprisingly well considering how tired I am. We went camping this weekend and only got back at midnight.

  3. For a Monday with all 3 kiddos home and me being outnumbered… it’s going amazingly well!! The older two want to pick out fabric to sew and then they want to bake this afternoon!!!

  4. Today’s going pretty well… it’s what I call “Black Monday”. Today I turned 50 and am trying to do it with a smile on my face. lol

  5. Having a great day! Made cookie dough- it’s in the fridge- have royal icing going in the mixer, and am about to go to zumba class. Fun!

  6. Honestly, the day’s not going so well. My husband and I have been arguing last night and this morning before he left for work, my poor 8 month old baby girl has a horrible cold, and I just discovered that I have a cake pop order that I have to have ready to be shipped by tomorrow! (I usually need three days to fill an order of this particular size.)
But the good news is my husband and I are working through our disagreement civily and “fighting fair”, my baby girl is finally asleep, and I got up early this morning to get a head start on baking. And to top it all off JESUS CHRIST IS LORD!!!!!
So everything will work out ok in the end. 🙂

    1. I so needed to read this today. I have a few things in common with you today. But like you said, JESUS CHRIST IS LORD and everything will work out. Thank you!(Wiping away tears)

      1. Well my day isn’t too good, my hubby and I have been arguing since last evening. He stomped off to work this morning only to pause at the door to say that he’s just tired of being with me. I feel as if my heart broke into a million tiny pieces. All I have is God and my constant prayers.

Anne and Claire I hope things turn out for the two of you. I will be praying for you guys.
