Ingredients

  • 1 cup 2 sticks butter at room temp
  • 1 1/2 cups sugar
  • 2 tablespoons fresh lemon zest
  • 2 1/2 cups AP flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 eggs
  • 1/3 cup cup fresh lemon juice
  • 1 cup buttermilk

Strawberry Buttercream

  • 1 cup 2 sticks butter, softened
  • 5 cups powder sugar
  • 2 tablespoons whole milk
  • 2 -4 large strawberries chopped

Instructions

  • Heat oven to 350 and prepare two 9-inch round baking pans.
  • In bowl of stand mixer fitted with whisk attachment, place the butter, sugar and lemon zest. Beat until light and fluffy.
  • In a separate bowl, mix together dry ingredients and set aside.
  • With the mixer on low speed, add the eggs, one at a time, combining thoroughly in between. With the mixer still running, add the lemon juice. (batter will look curdled, but its not)
  • Add one third of the dry ingredients and 1/2 cup of the buttermilk. Mix, then stop and scrape the sides of the bowl. Repeat, adding another third of the dry ingredients and the remaining 1/2 cup buttermilk. Mix, then stop and scrape. Add the remaining third of the dry ingredients and mix until completely combined and the batter is light and fluffy.
  • Divide the batter evenly between the prepared pans.
  • Bake for 25-30 minutes, or until an inserted toothpick comes out clean. Let the cakes cool before removing from the pans.

Strawberry Buttercream

  • Combine butter and powder sugar in a large bowl or standing mixer. Mix together on medium speed until pale and fluffy, about 3 minutes. Add in the milk and strawberries and mix on high speed until the frosting is very fluffy and pale pink in color, with flecks of strawberry.

  1. My day is going great! Sheets are blowing in the breeze. Flowers are blooming. I’m making a “Teapot” cake for my niece – waiting on the fondant to dry. Best of all I’m a child of the King and will see Him face to face someday!

  2. My day is going well in that it is the first Monday after having finished this year’s homeschool curriculum with my K and 2nd grader. Woo Hoo!!!

  3. My day did not start off good. I started an interim job today and had to be at work at 7:30am and my alarm did not go off. I jumped straight out of bed at 6:43 and actually made it, minus my mascara and half wet hair and breakfast! Then we had problems with the computer all morning. It is nice to relax at lunch now and reading my emails. It can only get better…

  4. Well the phrase “Rainy Days and Mondays” applies to today but this cake looks like it would solve the problem. But did you have to post this recipe on the day I’m starting a diet?

  5. for a Monday..its just SWELL…nah, i DID get to leave and go get lunch and come back and sit to enjoy said lunch reading emails and blogs that i truly LOVE

  6. I’m in the middle of a busy busy day! Gah so much to get done.
This recipe was meant for me! Just yesterday I was looking for one that involved strawberries and lemons. Bingo!

  7. My day has been (and will continue to be) spent studying for final exams whilst using my breaks to look at food blogs to give my brain some relaxation time 🙂

  8. Ehhh. Mondays are always rough at work, but I’m healthy and happy so I shouldn’t complain.
