    Quite a name huh?

    I was up pretty early this morning and thought I should make something special for the kids.  Banana nut muffins!

    So I searched and searched for a good recipe and finally stumbled upon this one from HubPages.

    Worlds Best (and Easiest!) Banana Nut Muffins

    (I am going to list the instructions just as they have them… I was able to actually follow them, and for me-a terrible recipe reader- that is awesome!)

    The ingredients are divided into “wet” and “dry” — the wet goes into one bowl, the dry into the other bowl:

    Banana Nut Muffins Foster

        Ingredients

        Wet Ingredients

        • 1 or 2 ripe bananas (no, they don\'t need to be dark though if they're over-ripe, that\'s okay, too)
        • one egg
        • 1/3 c MELTED butter
        • 1 1/2 tsp. vanilla
        • 2 tbsp. strong coffee (if you don\'t have leftover coffee, you can use water)
        • milk or buttermilk -- enough to make 2 cups TOTAL of wet ingredients (if you use 3 bananas you may only need a few tablespoons; if you use one banana, you may need to add 2/3s cup or more)

        Dry Ingredients

        • 1 1/2 c of all-purpose flour
        • 3/4 c sugar
        • 1 tsp. salt
        • 1/2 tsp. baking soda
        • 1/2 tsp. baking powder
        • 1/2 tsp. cinnamon
        • 1/2 tsp. ground nutmeg
        • 1 c chopped walnuts

        Instructions

        1. Preheat oven to 350 degrees.
        2. The trick to a perfect banana nut muffin is in the mixing process. Combine the wet ingredients INTO the dry ones and mix to just combine. It should be lumpy and may even look like its not fully combined... and thats ok!
        3. Spoon batter into prepared muffins tins (or just use cupcakes liners) and bake for 20 minutes.

        Now… while these might possibly be one of the most moist and scrumptious muffins I ever had, I still wanted to kick it up a notch.

        I had this crazy notion of banana’s foster in my head… so I decided to make a lovely caramel sauce for them.

        I know…. bananas foster is a dessert, not a breakfast… but people have caramel for breakfast all the time!  Like in caramel rolls!

        And lots of other stuff I cant think of right now.

        The caramel was easy… why didn’t anyone ever tell me how easy caramel was?  I am now putting it over everything.

        Quick Caramel

        1/2 cup brown sugar

        2 tablespoons butter

        1 tsp vanilla

        (and I am going to tell you this next ingredient even though I dont recommend you using it… but I wanted a thinner consistency)

        1 tablespoon milk

        Stir on medium heat until you reach desired consistency and then spoon over warm muffins!

        Final result?

        I had banana ice cream foster tonight! We are more and more meant to be friends! This is crazy! yes, mine was ice cream and yours was a baked good, but we both ate banana foster without talking to each other!

        Send the mocking muffin here. I’ll straighten it out! Those look yummy. I have overripe banans I need to use on my counter… but I think they may sadly be destined for the compost pile. When it comes to choosing between spotty banans and my sanity, my sanity wins. I don’t know how you do it all!

        I would eat it for breakfast in a heart beat! Looks yummy with the caramel sauce. Well it looked yummy BEFORE the caramel sauce. As for that last picture. I would have frosted the top, left the tongue hanging out and put eyes on it! LOL It is just too cute! That even got a laugh out of my hubby!

        Ha ha… I like that last muffin! here’s something I’m going to try at home. Do you think leaving the nuts out will be ok??

        Strong coffee?! That’s what my muffins have been missing all this time! I’m totally going to have to try that.
        And that mocking-you-muffin? Too funny!! I hope you mocked it right back and smothered it in caramel sauce, which IS ok for breakfast, though usually reserved for Saturday breakfasts around here 🙂

        I was giving this recipe a try, and got all the way to the put-in-muffin-tins part, before I remembered I’d thrown my ancient muffin tin away! So, I want to report that this also makes a really good banana bread…:) Thanks for sharing!
