My husband and two oldest kids left for a week-long fishing trip in Canada last night. It was them and 12 others… four kids going in total! As you can imagine, it takes quite a bit of planning to camp out in the Canadian wilderness for a week.

Luckily my hubby and I know how to get the best deal for our money when it comes to groceries.

He went to the grocery store and spent a good hour filling up two carts with fresh fruit, meats, veggies, snacks, and drinks.

Just a few minutes to make but such amazing flavor!

 

When he got back there was more fruit than they had room for. I happen to keep a nice stock of cake on hand (you never know when you will need cake!) so decided to make the guys a special treat before they left.

Delicious and easy mixed fruit cobbler. I’ve also seen this called a “dump cake” but I like the name cobbler better. 🙂

The star of this dish is most definitely the fruit. Most recipes call for all strawberries or all blueberries or all apples. But when you are surrounded by so many amazing fresh choices, why not add them all? I specifically added cherries and kiwi because I love the slightly bitter flavor they add to the sweet cake and berries.

The final result in this dessert is a fantastic warm blend of different fruits melded magically with white cake. When served warm and topped with whipped cream or vanilla ice cream, you really can’t go wrong!

Easy Fruit Cobbler

Prep Time 15 minutes
Cook Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • 2 c blueberries
  • 1 c roughly chopped strawberries
  • 1/2 c pitted and diced cherries
  • 1/4 c raspberries
  • 1/4 c peeled and diced kiwi
  • 1 box cake Mix
  • 1/2 c 1 stick, 113g butter

Instructions

  • Preheat oven to 350 degrees F.
  • Spray a 9x13 inch baking dish with non-stick spray.
  • Spread berries evenly in the bottom of your baking dish.
  • Sprinkle dry cake mix evenly over berries.
  • Cut butter into cubes and set on top of cake mix.
  • Bake for 50 - 60 minutes or until the top of the cake is browned and bubbling.
  • Serve warm with whipped cream, if desired.

  1. I absolutely adore your website, I love all of the recipes you share and the fact that you use so many of the same products I use from Aldi! I am in the Fort Worth Texas area and Aldi has become my “Go To” for baking staples. The prices for Flour, Sugar, Confectionary Sugar, oil, butter, cocoa, eggs etc. I can get better prices than Sam’s Wholesale most of the time. My biggest issue now is finding time to bake all of the wonderful things you share! Keep up the good work!
