    No-Bake Strawberry Cheesecake is the perfect dessert for anyone with a cheesecake craving!

    As summer meanders its way into our lives, I am having a glorious time thinking of all the wonderfully refreshing and easy desserts I can make.  Sometimes baking in the summer is just not something I look forward too, so still being able to enjoy a fabulous dessert without turning on my oven is such a treat!

    This sweet little cheesecake could not be easier!  With only four ingredients and then a delectable vanilla crust, you really can’t go wrong.

    For my crust, I used vanilla cookies (like Vanilla Oreo’s or Nilla Wafers) that were finely ground.  In total, there was about 3/4 cup of the crumbs, to which I added 2 tablespoons of melted butter.

    Then press into the bottom of a prepared 7-inch springform pan!  Easy peasy.

    No Bake Strawberry Cheesecake

        Ingredients

        • 2  packages (8 ounces each) cream cheese, softened
        • 1/2  cup sugar
        • 2  tablespoons McCormick® Imitation Strawberry Extract
        • 1  tub (8 ounces) frozen whipped topping, thawed

        Instructions

        1. Beat cream cheese, sugar and extract in large bowl with electric mixer on medium speed until well blended and smooth. Gently stir in whipped topping. Spoon into crust.
        2. Refrigerate 3 hours or until set. Garnish with fresh strawberries or whipped topping. Store leftover cheesecake in refrigerator

        The McCormick Strawberry Extract is actually tinted a sweet dusty rose color, so not only will your pie taste like sweet strawberry, but it will look like it too!

        Now, if only to figure out how to bake a two-layer chocolate cake without an oven.

        Yum! I love the convenience of a no-bake dessert…especially during the warm months (which, as you know, equal about 3 in Wisconsin…June, July, and August) 😉

        I attempted this recipe. It was good, but my cake was a little on the soft side, it was wobbly. Any idea what’s wrong?

        I went to two local stores and did not find strawberry extract…am thinking of just making a little “strawberry juice” by cutting up some strawberries and sprinkling sugar on them and using the juice that results to flavor this?

        I used 2 Tablespoons ofmy homemade strawberry syrup and real whipped cream to make it healthier.

        Wouldn’t the addition of some chopped fresh strawberries make this better? I don’t really “get” the strawberry flavoring instead of the fresh strawberries.
