Blueberry filling
- 1 cup (200 g) granulated sugar
- 3 tablespoons cornstarch
- ⅛ teaspoon kosher salt
- ¼ cup water
- 4 cups (592 g) fresh blueberries, divided
Blueberry Filling
To a medium saucepan over medium heat, add sugar, cornstarch, and salt. Slowly drizzle in water, whisking constantly until smooth.
Add half of the blueberries. Increase the heat to medium and bring the mixture to a boil. Continue cooking until thickened (about 4-5 minutes). Then fold in the remaining blueberries. Remove from heat as you prepare the biscuit dough.
Biscuits
To a medium bowl, add flour, baking powder, sugar, and salt. Use a whisk to sift the ingredients.
Pour in the buttermilk and stir until mostly combined, being careful not to overwork the batter.
Assembly
Pour the blueberry filling into the baking dish.
Using a spoon, dollop the biscuit dough on top of the blueberry filling. Carefully spread it into an even layer. Evenly drizzle the melted butter over the top.
