- ¼ cup mint leaves, plus more for garnish
- 1 ounce freshly squeezed lime juice
- 1 ounce simple syrup
- 2 ounces white rum
- crushed ice
- champagne, for serving
- lime slices, for garnish
To a cocktail shaker, add mint leaves, lime juice, and simple syrup. Use a muddler to release the mint flavor.
Add rum and ice. Cover and shake until well chilled.
Fill 2 highball glasses with ice. Evenly strain the cocktail over the ice. Top each glass with champagne. Gently stir to combine.
Garnish with mint leaves. Serve immediately. Cheers!
