Ingredients

  • ¼ cup mint leaves, plus more for garnish
  • 1 ounce freshly squeezed lime juice
  • 1 ounce simple syrup
  • 2 ounces white rum
  • crushed ice
  • champagne, for serving
  • lime slices, for garnish

Instructions

  • To a cocktail shaker, add mint leaves, lime juice, and simple syrup. Use a muddler to release the mint flavor.
  • Add rum and ice. Cover and shake until well chilled.
  • Fill 2 highball glasses with ice. Evenly strain the cocktail over the ice. Top each glass with champagne. Gently stir to combine.
  • Garnish with mint leaves. Serve immediately. Cheers!
