Raspberry Oatmeal Crumble Bars

Ingredients

  • 1 cup (125 g) all-purpose flour
  • 1 cup (90 g) old-fashioned oats
  • ½ cup (100 g) light brown sugar, packed
  • ¼ teaspoon baking soda
  • teaspoon kosher salt
  • ½ cup (1 stick / 113 g) unsalted butter, melted
  • ¾ cup (240 g) raspberry jam

Instructions

  • Preheat oven to 350°F. Line an 8x8-inch baking dish with parchment paper. Set aside.
  • To a medium bowl, add flour, oats, brown sugar, baking soda, and salt. Mix well.
  • Pour the melted butter over the dry ingredients. Using a fork or pastry cutter, mix the butter into the dry ingredients until the mixture becomes crumbly and resembles coarse crumbs. Make sure there are no large clumps of dry ingredients remaining.
  • Firmly press ⅔ of the oat mixture into an even layer in the bottom of the prepared pan.
  • Carefully spread the jam on top of the crust. Sprinkle the remaining oat mixture evenly over the raspberry jam layer, covering it completely.
  • Bake for 30-35 minutes, or until the edges are golden brown. Let the bars cool before cutting and serving.
