Ingredients

  • 4 chicken breasts
  • ¼ cup fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon cumin
  • ¾ teaspoon salt
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder

Instructions

  1. Place chicken, lime juice, cilantro, and seasoning in a ziptop bag. Refrigerate chicken for 30 minutes or up to an hour. (Marinating chicken for longer can result in a tough chicken.)

  2. Preheat an outdoor grill or a grill pan to medium-high heat. (I like to coat the grill with oil to ensure the chicken doesn't stick.)

  3. Remove chicken from marinade, discard marinade, and grill chicken for 5-6 minutes per side or until juices run clear and chicken registers 165 degrees.

  4. Garnish chicken with limes and extra cilantro if desired.
