Spinach Stuffed Chicken

Ingredients

  • 6-oz. chicken fillets
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 4 ounces block cream cheese, softened
  • 1/2 cup shredded mozzarella
  • 1/3 cup Parmesan cheese
  • 1/2 cup frozen spinach, defrosted
  • 1/4 teaspoon garlic powder
  • Pinch red pepper flakes
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • Juice of 1/2 lemon

Instructions

  • Season chicken all over with salt and pepper. 
  • In a large bowl, mix together cream cheese, mozzarella, parmesan, spinach, garlic powder, and red pepper flakes.
  • Using a paring knife, slice a slit in each chicken breast to create a pocket. Stuff pockets with cream cheese mixture.
  • In a large skillet over medium heat, heat oil. Add chicken and cook until seared, about 6 minutes, then flip chicken. Add butter and squeeze lemon juice all over.
  • Continue cooking until Chicken is no longer pink or reaches an internal temperature of 165°F.
  • Serve warm.

Notes

TO STORE LEFTOVERS:  Leftover chicken can be stored in the refrigerator for up to 3-4 days in an airtight container.  Best if wrapped tightly in plastic wrap.
