Beer Cheese Dip

- 2 tablespoons butter
- 1 tablespoon garlic, minced
- 2 tablespoons flour
- 1 ½ cups beer
- 1 tablespoon dijon mustard
- 1 teaspoon paprika
- 4 ounces cream cheese
- 4 strips bacon, cooked and diced
- 2 cups extra sharp white cheddar, freshly grated
- 2 cups sharp cheddar, freshly grated
In a medium skillet melt the butter over medium heat.
Add the garlic and cook until fragrant (about 1 minute).
Stir in the flour and let cook for 1 minute.
Reduce heat slowly and stir in the beer, mustard, paprika, cream cheese, and bacon.
Simmer for 5 minutes and then remove from heat and stir in all of the cheeses.
