  • 1/2 cup (114g) butter
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 3/4 cups (219g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 ½ teaspoon pumpkin pie spice
  • 1/2 teaspoon kosher salt
  • 1 cup (168g) semisweet chocolate chips


  1. Preheat the oven to 350°F.
  2. In a large bowl, add butter. Soften in the microwave for 30 seconds.
  3. Mix in the sugars.
  4. Add the vanilla and egg until incorporated.
  5. Pour in the flour, baking soda, pumpkin pie spice, and salt.
  6. Mix all the ingredients until combined.

  7. Measure in the chocolate chips.

  8. For a large cookie, drop large spoonfuls (3 tablespoons) of dough on your cookie sheet.

  9. Bake for 11-13 minutes, or until cookies are set. They will be puffy and should not appear wet.
