Crust
- 1 cup (125g) all-purpose flour
- 1/3 cup (42g) confectioners’ sugar
- 1/2 cup (1 stick or 113g) cold butter, diced
Apple Filling
- 3 cups granny smith apples, peeled, cored, and thinly sliced
- 1/3 cup (67g) brown sugar
- 1 teaspoon flour
Caramel Layer
- 3/4 cup caramel topping
- 1/4 cup (31g) all-purpose flour
Topping
- 1/2 cup quick oats oatmeal
- 1/2 cup (1 stick or 113g) cold butter, diced
- 3/4 cup (94g) all-purpose flour
- 1/3 cup (42g) confectioners’ sugar
Crust
Preheat oven to 325°F.
In a large bowl, blend the flour, confectioners’ sugar, and butter. You can use a food processor or pastry cutter, but I prefer my hands. You want the butter to be no bigger than a pea size and the ingredients well incorporated.
Press into a greased 8x8-inch pan.
Bake for 15 minutes.
Topping
In a medium bowl, add cold butter, flour, confectioners’ sugar and oatmeal. Using your hands, sift the flour over the butter and then start breaking down each piece into pea-sized pieces.
Crumble the oatmeal mixture over the apples and caramel mix.
Bake for 35 more minutes.
