Jello
- 1 cup cranberry juice
- 1½ cups cranberries, fresh or frozen (thawed, if using frozen)
- 1 box (6 ounces) cherry jello mix
- 1¼ cups (250 g) granulated sugar
- 1 can (8 ounces) crushed pineapple, drained
Topping
- 4 ounces cream cheese, room temperature
- ⅓ cup (67 g) granulated sugar
- 1½ cups whipped topping
Jello
In a medium saucepan over medium heat, add cranberry juice. Bring the juice to a boil.
Add the cranberries to the juice and again, bring to a boil. Cook for 5-7 minutes, or until the berries burst.
Remove the pan from the heat. Add the cherry jello mix, sugar, and crushed pineapples to the cranberry mixture. Stir until both the jello mix and sugar dissolve. This will make about 3½ cups total.
Pour the mixture evenly between dessert cups. I added ½ cup of the jello mixture to each cup. (Depending on your serving size, the number of servings may vary.)
Allow the jello mixture to chill in the refrigerator overnight, about 12 hours, or until slightly firm.
Topping
To a large mixing bowl, add the cream cheese and sugar. Using a hand mixer on medium-high speed, beat the cream cheese and sugar together until fully incorporated.
Gently fold in the whipped topping.
Top each dessert cup evenly with a large dollop of the whipped topping mixture.
Serve immediately. Or, store in the refrigerator until ready to enjoy.
