Ingredients

Bread

  • 1 cup (200 g) granulated sugar
  • ½ cup (115 g) sour cream, room temperature
  • ¾ cup (163.5 g) vegetable oil
  • 2 large eggs, room temperature
  • 1 cup (255 g) applesauce
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 cup (90 g) old-fashioned oats
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • ¼ teaspoon kosher salt

Glaze

  • 1 cup (125 g) confectioners' sugar
  • ¼ cup applesauce

Instructions

  • Preheat oven to 350°F. Spray an 8 ½ x 4 ½-inch loaf pan with non-stick cooking spray.
  • In a medium bowl, whisk together the sugar, sour cream, oil, eggs, applesauce, and vanilla.
  • In a large bowl, whisk together the flour, oats, salt, cinnamon, and baking powder.
  • Add the wet mixture to the flour mixture. Stir until the ingredients are fully incorporated.
  • Pour the batter into the prepared loaf pan and bake for 75-80 minutes, or until a toothpick inserted in the center comes out with a few crumbs, but no wet batter.
  • Let the loaf cool completely in the pan on a cooling rack.
  • While the loaf is cooling, make the glaze. Stir together the confectioners' sugar and applesauce until smooth. Pour over the cooled loaf and let glaze set for a few minutes. Slice and serve.
