Bread
- 1 cup (200 g) granulated sugar
- ½ cup (115 g) sour cream, room temperature
- ¾ cup (163.5 g) vegetable oil
- 2 large eggs, room temperature
- 1 cup (255 g) applesauce
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 cup (90 g) old-fashioned oats
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- ¼ teaspoon kosher salt
Glaze
- 1 cup (125 g) confectioners' sugar
- ¼ cup applesauce
Preheat oven to 350°F. Spray an 8 ½ x 4 ½-inch loaf pan with non-stick cooking spray.
In a medium bowl, whisk together the sugar, sour cream, oil, eggs, applesauce, and vanilla.
In a large bowl, whisk together the flour, oats, salt, cinnamon, and baking powder.
Add the wet mixture to the flour mixture. Stir until the ingredients are fully incorporated.
Pour the batter into the prepared loaf pan and bake for 75-80 minutes, or until a toothpick inserted in the center comes out with a few crumbs, but no wet batter.
Let the loaf cool completely in the pan on a cooling rack.
While the loaf is cooling, make the glaze. Stir together the confectioners' sugar and applesauce until smooth. Pour over the cooled loaf and let glaze set for a few minutes. Slice and serve.
