Bread
- 1 cup (200 g) granulated sugar
- ½ cup (115 g) sour cream, room temperature
- ¾ cup (163.5 g) vegetable oil
- 2 large eggs, room temperature
- 1 cup (255 g) applesauce
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 cup (90 g) old-fashioned oats
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- ¼ teaspoon kosher salt
Glaze
- 1  cup (125 g) confectioners' sugar
- ¼ cup applesauce
- Preheat oven to 350°F. Spray an 8 ½ x 4 ½-inch loaf pan with non-stick cooking spray. 
- In a medium bowl, whisk together the sugar, sour cream, oil, eggs, applesauce, and vanilla. 
- In a large bowl, whisk together the flour, oats, salt, cinnamon, and baking powder.  
- Add the wet mixture to the flour mixture. Stir until the ingredients are fully incorporated. 
- Pour the batter into the prepared loaf pan and bake for 75-80 minutes, or until a toothpick inserted in the center comes out with a few crumbs, but no wet batter. 
- Let the loaf cool completely in the pan on a cooling rack. 
- While the loaf is cooling, make the glaze. Stir together the confectioners' sugar and applesauce until smooth. Pour over the cooled loaf and let glaze set for a few minutes. Slice and serve.
