Ingredients

Crumble Topping

  • 1/2 cup (1 stick or 113g) cold butter, cubed
  • 3/4 cup all-purpose flour
  • 1/3 cup confectioners sugar

Bread Dough

  • 2 cups self-rising flour
  • 1 1/3 cups plain greek yogurt

Cinnamon Butter Topping

  • 3 tablespoons butter
  • 3 tablespoons granulated sugar
  • 1 teaspoon cinnamon

Glaze

  • 1 cup confectioners sugar
  • 1-2 tablespoons milk

Instructions

Crumble Topping

  1. In a medium bowl, add the cold cubed butter, flour, and confectioners sugar. Using your hands, sift the flour over the butter and then start breaking down each cuce into pea-sized pieces. When done every ingredient should be well incorporated. (It is ok to have a few chunks.) Place in the refrigerator until ready to add the crumble.

Bread Dough

  1. In a large bowl, add the self-rising flour and yogurt. Use a spoon to mix together as well as you can, then switch to your clean hands. Mix with hands until ingredients are coming together and then turn out onto a clean surface to knead for about 5 minutes. If the dough is too dry (crumbly), add a tablespoon of yogurt. If it is too wet, add a tablespoon of self-rising flour. Once the dough is kneaded and smooth, roll it out into a circle. It should be about 1/2 inch thick.
  2. Place dough on a parchment-lined pizza stone or a parment-lined baking sheet. Bake at 475°F for 5-6 minutes, or until the edges just start to brown. Remove from oven. (It will bake again once toppings are added.)

Cinnamon Butter Topping

  1. While the dough is baking for the first time, melt together butter, sugar, and cinnamon in microwave for about 30 seconds. Stir.

Glaze

  1. Mix confectioners sugar and 1 tablespoon milk in a bowl until smooth and creamy. If too thick, and in another tablespoon sugar. Set aside.

Assembly

  1. After the dough has been removed from the oven, brush the cinnamon butter over the dough in a thin layer, covering the entire surface.
  2. Sprinkle the cold crumble topping over the cinnamon butter topping getting out to the edges.
  3. Place back into the over for 6-8 minutes, or until the crumble no longer appears wet and is starting to turn golden brown.
  4. When done, remove from the oven and let sit for about 5-10 minutes.
  5. After it has cooled down a little bit, drizzle with all of the glaze.
  6. Serve immediately.
