Caramel Apple Pie Filling

- 10 medium Granny Smith apples, peeled, cored, sliced (about 8 cups)
- 1 tablespoon lemon juice
- 6 tablespoons (85 g) unsalted butter
- 1 cup (200 g) light brown sugar, packed
- ⅓ cup (79 g) heavy cream
- 2 tablespoons water
- 1 tablespoon vanilla extract
- 2 teaspoons ground cinnamon
- ½ teaspoon kosher salt
- ¼ teaspoon ground nutmeg
In a large bowl, toss the sliced apples with the lemon juice. Set aside.
In a large saucepan or Dutch oven over medium heat, melt the butter.
Add the brown sugar, heavy cream, 2 tablespoons water, vanilla, cinnamon, salt, and nutmeg. Stir until the sugar has dissolved and the mixture is smooth and glossy, about 2 minutes.
Add the apples and stir to coat them in the caramel mixture. Cook, stirring often, for 6 to 8 minutes, or until the apples have softened but still hold their shape.
In a small bowl, whisk together the cornstarch and 3 tablespoons water. Pour the slurry into the pan and cook, stirring constantly, for 1 to 2 minutes, or until the sauce has thickened and coats the apples.
Remove from the heat and let the filling cool for at least 15 minutes. The filling will continue to thicken as it cools.
Use the filling right away, or cool completely before storing.
