- 3 large egg yolks, lightly beaten
- ¼ cup (50 g) granulated sugar
- ⅛ teaspoon kosher salt
- ½ cup (4 ounces) freshly brewed hot coffee
- ½ cup (119 g) heavy whipping cream
Fill a medium saucepan with 1–2 inches of water and bring it to a gentle simmer over medium-low heat. Place a heatproof glass or metal bowl over the pan, ensuring it sits above the water without touching it.
To the bowl, add the lightly beaten egg yolks, sugar, and salt. Whisk until fully combined.
Slowly pour in the hot coffee while whisking constantly to prevent the eggs from curdling.
Stir the mixture frequently for 10–15 minutes, or until it thickens slightly and becomes a bit foamy.
Remove the bowl from the heat and let it cool for 5–10 minutes.
In a separate bowl, whip the heavy cream with a hand mixer or whisk until soft peaks form. (The cream should gently hold its shape when you lift the whisk.)
Gently fold the whipped cream into the cooled coffee mixture using a spatula. Mix until smooth and fully combined.
Cover the sauce and chill it in the refrigerator until ready to serve.
