Ingredients

  • 3 large egg yolks, lightly beaten
  • ¼ cup (50 g) granulated sugar
  • teaspoon kosher salt
  • ½ cup (4 ounces) freshly brewed hot coffee
  • ½ cup (119 g) heavy whipping cream

Instructions

  • Fill a medium saucepan with 1–2 inches of water and bring it to a gentle simmer over medium-low heat. Place a heatproof glass or metal bowl over the pan, ensuring it sits above the water without touching it.
  • To the bowl, add the lightly beaten egg yolks, sugar, and salt. Whisk until fully combined.
  • Slowly pour in the hot coffee while whisking constantly to prevent the eggs from curdling.
  • Stir the mixture frequently for 10–15 minutes, or until it thickens slightly and becomes a bit foamy.
  • Remove the bowl from the heat and let it cool for 5–10 minutes.
  • In a separate bowl, whip the heavy cream with a hand mixer or whisk until soft peaks form. (The cream should gently hold its shape when you lift the whisk.)
  • Gently fold the whipped cream into the cooled coffee mixture using a spatula. Mix until smooth and fully combined.
  • Cover the sauce and chill it in the refrigerator until ready to serve.
