- 2 large eggs, room temperature
- 1 cup (258 g) creamy peanut butter
- ¾ cup (150 g) light brown sugar, packed
- ¼ cup (50 g) granulated sugar
- 2 teaspoons vanilla extract
- ¾ cup (67.5 g) old fashioned oats
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- ½ cup (86.5 g) mini semisweet chocolate chips
In a large bowl, combine the eggs, peanut butter, brown sugar, granulated sugar, and vanilla. Mix well.
Mix in the oats, baking soda, and salt.
Add the chocolate chips. Mix until combined.
Cover the bowl with plastic wrap and chill the dough in the refrigerator for 1-3 hours.
When ready, preheat the oven to 350°F. Line a baking sheet with parchment paper.
Using a 2-tablespoon scoop, drop cookie dough onto the parchment-lined baking sheet. Leave about 2 inches between each cookie.
Bake for 13-15 minutes, or until the edges are slightly golden brown. Remove from the oven and let cool.
