Jalapeno Chicken Salad

- 1 Rotisserie Chicken, shredded, skin removed
- 1 teaspoon chipotle chili powder
- ½ teaspoon lime juice
- ⅛ teaspoon cumin
- ⅛ teaspoon cayenne pepper
- ½ teaspoon garlic powder
- 2 heads Romain Lettuce, chopped
- 1 Roma Tomato, chopped
- 1 small red onion, chopped
- 3 strips bacon, cooked and crumbled
- 1 avocado, cut into strips
- 1 tablespoon cilantro, chopped
- 1 can (15.25 ounces) corn
- 1 cup Jalapeno Ranch Dressing (link to recipe in notes)
- 1 cup Crispy Fried Jalapenos (link to recipe in notes)
In a medium bowl, combine shredded chicken, chili powder, lime juice, cumin, cayenne pepper, and garlic powder.
In a separate large bowl, combine romaine lettuce, tomato, onion, bacon, avocado, cilantro, corn and half of the jalapeno ranch dressing. Add in chicken. Toss to coat. (Add more dressing to taste.)
Top with crispy fried jalapenos.
Serve Immediately.
