Lime Brownies
- 1 cup (2 sticks / 227 g) unsalted butter, melted
- 1 ¾ cups (350 g) light brown sugar, packed
- 3 large eggs, room temperature
- ¼ cup (61 g) fresh lime juice, from about 3 to 4 limes
- 1 teaspoon lime zest, from 1 to 2 limes
- 2 ½ cups (313 g) all-purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
Lime Glaze
- 1 cup (125 g) confectioners' sugar
- 2 tablespoons fresh lime juice
Lime Brownies
Preheat the oven to 350°F. Line a 9x13-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
In a large bowl, stir together the melted butter and brown sugar until fully combined.
Add the eggs, one at a time, mixing well after each addition.
Stir in the lime juice and lime zest until incorporated.
In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt.
Add the dry ingredients to the wet ingredients and stir just until no dry streaks remain. Do not overmix.
Spread the batter evenly into the prepared pan.
Bake for 25 to 30 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out with a few moist crumbs but no wet batter.
Lime Glaze
While the brownies bake, prepare the glaze. In a medium bowl, whisk together the confectioners' sugar and lime juice until smooth.
Pour the glaze over the warm brownies and spread it into an even layer.
Allow the glaze to set completely before slicing and serving.
