Ingredients

  • 2 cups (56 g) Lucky Charms cereal, marshmallows separated and reserved for topping
  • 4 cups (108 g) Rice Chex cereal
  • ¾ cup (136.5 g) semisweet chocolate chips
  • 3 tablespoons unsalted butter
  • 2 ½ tablespoons vanilla coffee creamer (or Irish Cream if in season)
  • ½ teaspoon vanilla extract
  • 1 ½ cups (187 g) confectioners' sugar

Instructions

  • Line a large baking sheet with parchment paper. Set aside.
  • Separate the marshmallows from the Lucky Charms cereal. Set the marshmallows aside for topping.
  • In a large bowl, combine the Rice Chex and Lucky Charms cereal (without marshmallows). Gently toss to combine and set aside.
  • In a medium microwave-safe bowl, combine chocolate chips and butter. Microwave in 30-second intervals, stirring well after each, until fully melted and smooth.
  • Stir in the vanilla coffee creamer and vanilla extract until the mixture is glossy and fully combined. The chocolate should be smooth and pourable, not thin.
  • Pour the chocolate mixture over the cereal mixture. Using a silicone spatula, gently fold until all cereal pieces are evenly coated.
  • Transfer the coated cereal to a large sealable plastic bag. Add the confectioners’ sugar. Seal the bag and shake until the cereal is completely coated.
  • Spread the coated cereal onto the prepared baking sheet. Let it fully cool and allow the chocolate coating to firm up, about 15 to 20 minutes.
  • Sprinkle the reserved Lucky Charms marshmallows over the top before serving.
