Lucky Charms Puppy Chow

- 2 cups (56 g) Lucky Charms cereal, marshmallows separated and reserved for topping
- 4 cups (108 g) Rice Chex cereal
- ¾ cup (136.5 g) semisweet chocolate chips
- 3 tablespoons unsalted butter
- 2 ½ tablespoons vanilla coffee creamer (or Irish Cream if in season)
- ½ teaspoon vanilla extract
- 1 ½ cups (187 g) confectioners' sugar
Line a large baking sheet with parchment paper. Set aside.
Separate the marshmallows from the Lucky Charms cereal. Set the marshmallows aside for topping.
In a large bowl, combine the Rice Chex and Lucky Charms cereal (without marshmallows). Gently toss to combine and set aside.
In a medium microwave-safe bowl, combine chocolate chips and butter. Microwave in 30-second intervals, stirring well after each, until fully melted and smooth.
Stir in the vanilla coffee creamer and vanilla extract until the mixture is glossy and fully combined. The chocolate should be smooth and pourable, not thin.
Pour the chocolate mixture over the cereal mixture. Using a silicone spatula, gently fold until all cereal pieces are evenly coated.
Transfer the coated cereal to a large sealable plastic bag. Add the confectioners’ sugar. Seal the bag and shake until the cereal is completely coated.
Spread the coated cereal onto the prepared baking sheet. Let it fully cool and allow the chocolate coating to firm up, about 15 to 20 minutes.
Sprinkle the reserved Lucky Charms marshmallows over the top before serving.
