- ¼ cup fresh mint leaves, loosely packed
- 2 tablespoons fresh pineapple, finely chopped
- 1 ounce simple syrup
- 3 ounces pineapple juice
- 2 ounces light rum
- 1 ounce fresh lime juice, about ½ lime
- crushed ice
- club soda, to top off the drink

To a cocktail shaker, add mint leaves, chopped pineapple, and simple syrup. Muddle gently until the mint is fragrant and the pineapple is broken down.
Add pineapple juice, rum, lime juice, and a handful of crushed ice. Seal and shake vigorously for 15–20 seconds until well chilled.
Fill two highball glasses with crushed ice. Strain the mixture evenly into the glasses.
Top each glass with club soda.
Garnish each drink with a pineapple wedge, a sprig of mint, and a lime wedge. Serve immediately.
