Ingredients

  • ¼ cup fresh mint leaves, loosely packed
  • 2 tablespoons fresh pineapple, finely chopped
  • 1 ounce simple syrup
  • 3 ounces pineapple juice
  • 2 ounces light rum
  • 1 ounce fresh lime juice, about ½ lime
  • crushed ice
  • club soda, to top off the drink
  • pineapple wedges, for garnish (optional)
  • fresh mint sprigs, for garnish (optional)
  • lime wedge, for garnish (optional)

Instructions

  • To a cocktail shaker, add mint leaves, chopped pineapple, and simple syrup. Muddle gently until the mint is fragrant and the pineapple is broken down.
  • Add pineapple juice, rum, lime juice, and a handful of crushed ice. Seal and shake vigorously for 15–20 seconds until well chilled.
  • Fill two highball glasses with crushed ice. Strain the mixture evenly into the glasses.
  • Top each glass with club soda.
  • Garnish each drink with a pineapple wedge, a sprig of mint, and a lime wedge. Serve immediately.
