Instructions

  • In a medium heavy-bottomed saucepan over high heat, bring the water to a full boil.
  • Stir in the oats and salt. Reduce heat to low and simmer uncovered, stirring every 30–60 seconds, for 3–5 minutes, or until the oats are tender and most of the water is absorbed.
  • Stir in the pumpkin, brown sugar, and pumpkin pie spice. Cook 2–3 more minutes, stirring gently, until well combined and slightly thickened.
  • Add the warm milk, butter, and vanilla. Cook for 1–2 minutes more, just until creamy and blended.
  • Remove from heat and cover. Let sit 4-5 minutes to thicken.
  • Spoon into bowls and top with pecans, maple syrup, a splash of milk, or a pinch of cinnamon.
