Ingredients

French Toast Filling

  • ¼ cup (½ stick / 57 g) unsalted butter
  • 5 medium (5 cups) Granny Smith apples, peeled, cored, and diced into ¼-inch cubes
  • 2 tablespoons light brown sugar, packed
  • 1 teaspoon cinnamon
  • 1 loaf (16 ounces) brioche bread, cut into ¼-inch cubes

Egg Mixture

  • 12 large eggs, room temperature, beaten
  • 2 cups (490 g) whole milk, room temperature
  • cup (105 g) maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon kosher salt

Topping

  • ½ cup (55 g) chopped pecans

Cream Cheese Glaze

  • ¼ cup (½ stick / 57 g) unsalted butter, softened
  • 1 ounce cream cheese, softened
  • ½ teaspoon vanilla extract
  • ¾ cup (94 g) confectioners' sugar
  • 1-3 tablespoons whole milk, room temperature

Instructions

French Toast Filling

  • Spray a 9x13-inch baking dish with nonstick cooking spray. Set aside.
  • In a medium saucepan over medium heat, melt butter. Once melted, add apples and cook until softened (about 5 minutes).
  • Add brown sugar and cinnamon and cook until dissolved (about 2 minutes). Set aside to cool.
  • To the prepared baking dish, add half of the bread. Top with half of the cooled apple mixture. Top with the remaining bread, and end with the rest of the apple mixture.

Egg Mixture

  • In a large bowl combine eggs, milk, maple syrup, vanilla, cinnamon, and salt.
  • Pour egg mixture evenly over the layers of bread and apple mixture. Cover with plastic wrap and refrigerate overnight.
  • When ready, preheat the oven to 350°F.
  • Remove the mixture from the refrigerator and let it rest at room temperature for 30 minutes before baking.
  • Top the mixture with pecans and cover with aluminum foil. Bake for 40 minutes, remove foil, and bake 40 more minutes, or until the center does not jiggle. Remove from the oven and let it cool a bit as you make the glaze.

Cream Cheese Glaze

  • While the apple french toast bake cools, mix together the glaze ingredients in a medium bowl. Start with a tablespoon of milk, adding more until the glaze reaches your desired consistency.
  • Pour the glaze over the warm french toast bake and serve.
