Buffalo Cheese Curds

  • 1 pound white cheddar cheese curds, room temperature
  • 1 quart vegetable oil
  • 1 cup flour
  • ½ teaspoon kosher salt
  • teaspoon baking powder
  • 2 large eggs, room temperature
  • ¼ cup whole milk, plus more if needed
  • 1 cup buffalo sauce, plus more for drizzling
  • Ranch or Blue cheese dressing, for dipping


  1. In a large heavy bottom pot, pour at least 2 inches of oil. Heat to 425°F.
  2. In a large bowl, whisk together flour, salt, and baking powder.

  3. Add eggs, milk, and buffalo sauce and whisk to combine. Add more milk to reach your desired batter consistency.

  4. Dip 5-6 cheese curds into the mixture and carefully drop them into the hot oil. Cook them for 1-2 minutes, or until a crispy golden brown.

  5. Using a slotted spoon, remove the cooked cheese curds from the oil and place on a paper towel.
  6. Repeat with remaining cheese curds.
  7. Drizzle with remaining buffalo sauce and serve hot with Ranch or Blue cheese dressing for dipping.
