  • 1 large orange
  • 1 box (15.25 ounces) chocolate cake mix
  • 3 large eggs, room temperature
  • ½ cup vegetable oil
  • 1 cup water



  1. Bring a medium saucepan of water to a rolling boil.

  2. Reduce heat to simmer and add one large orange to the pan. Simmer for 1 hour. Reserve 1/2 cup of the water to add to the blender.

  3. Carefully transfer the orange and 1/2 cup of the water to a high-powered blender and puree until smooth. (Be sure blender lid is secure. I like to hold it on with a dishtowel just to be extra safe.)


  1. Preheat oven to 350°F and line a muffin tin with liners.

  2. In a mixing bowl combine the box of chocolate cake mix, eggs, oil, and water.

  3. Add the pureed orange (which should have cooled slightly by now) to the mixture.

  4. Pour the mixture into the lined muffin tin. Bake for 20-22 minutes. Serve warm.
