Pastry
- 2 sheets frozen puff pastry, thawed according to package directions
- ½ cup (56.5 g) mozzarella cheese, shredded
- 1 large egg, beaten
- ¼ cup (25 g) parmesan cheese, grated
Compound Butter
To a medium bowl, add the butter, rosemary, thyme, salt and bacon. Stir to combine. Set aside while you prepare the pastry
Pastry
Preheat oven to 350°F. Line a large baking sheet with parchment paper.
Place one sheet of puff pastry onto the prepared baking sheet.
Spread the butter mixture in a triangular tree shape over the puff pastry.
Sprinkle the mozzarella over the butter mixture.
Place the second puff pastry sheet on top. Gently press the pastry sheet down to feel where the outline of the tree shaped butter and cheese is. Using a sharp knife, carefully cut along the edges of the tree shape. Remove the excess pastry.
Leaving about 2 inches in the center of the tree intact for the "trunk", carefully cut horizontal strips up the tree on both sides of the "trunk" (about 2 inches wide). These strips will be the "branches".
Carefully twist each "branch" of pastry away from you about 2-3 times.
Brush the pastry with the beaten egg. Sprinkle the parmesan cheese over the pastry.
Bake for 18-22 minutes, or until golden brown.
