  • 1 cup (122 g) yellow cornmeal
  • 1 cup (125 g) all-purpose flour
  • ¼ cup (50 g) granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt
  • 1 tablespoon cornstarch

  • In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, kosher salt, and cornstarch until well combined.
  • Store the cornbread mix in an airtight container in a cool, dry place for up to 6 months, or until ready to use.

To Make Cornbread

  • Preheat the oven to 400°F. Lightly spray an 8x8-inch baking dish or a standard 12-cup muffin tin with nonstick cooking spray.
  • In a medium bowl, whisk together the cornbread mix, egg, milk, and melted butter until just combined. A few lumps are okay.
  • Pour the batter into the prepared baking dish or divide it evenly among the muffin cups. The exact number of muffins will vary depending on how full you fill each cup.
  • Bake the cornbread for 18 to 22 minutes, or bake the muffins for 15 to 18 minutes, until the tops are golden brown and a toothpick inserted into the center comes out with a few moist crumbs but no wet batter.
  • Let the cornbread cool in the baking dish for 5 to 10 minutes before cutting and serving. If making muffins, let them cool in the pan for a few minutes before transferring them to a wire rack.
