Making your own homemade cornbread mix is one of the easiest ways to always have fresh, from-scratch cornbread ready to go. This simple dry mix uses basic pantry ingredients, comes together in minutes, and tastes so much better than anything that comes in a box. Just add an egg, milk, and melted butter when you’re ready to bake, and you’ll have warm, fluffy cornbread or muffins in under 30 minutes.
I started keeping this mix on hand years ago because I got tired of measuring out the dry ingredients every single time I wanted cornbread with chili or soup. Now I always have a jar of it in the pantry. It has a better texture and more real corn flavor than store-bought mixes, and you control the sweetness. If you want something a little sweeter, try my classic Cornbread Recipe (that one uses a mix of sugars)

Why Make Your Own Cornbread?
Store-bought mixes are convenient, but most of them rely on additives and have a flatter flavor. This homemade version uses real cornmeal, a touch of sugar, and cornstarch for tenderness. The result is cornbread that is softer, slightly sweet, and full of that classic homemade taste. Plus, you can make a big batch and always have it ready.
Ingredients & Substitutions
- Yellow cornmeal: Cornmeal gives this mix its classic cornbread flavor and texture. Yellow cornmeal gives the cornbread its golden color, but white cornmeal can also be used.
- All-purpose flour: Flour balances the cornmeal and helps create a soft, tender crumb.
- Granulated sugar: Adds just enough sweetness without making it dessert-like. For a sweeter cornbread, increase the sugar to ⅓ cup or even ½ cup. You can also reduce it slightly if you prefer a more savory version.
- Baking powder: Helps the cornbread rise and become light and fluffy.
- Kosher salt: Enhances the flavors and keeps the cornbread from tasting flat.
- Cornstarch: This is the secret to a soft, tender crumb. Cornstarch has no gluten, so it helps keep the cornbread from becoming dense or dry. It’s a small but important addition that improves the texture.
- To make cornbread: When you are ready to bake, add one large egg, milk, and melted unsalted butter to the mix. You can use whole milk, 2% milk, or a milk alternative if needed. Salted butter can also be used; just reduce the added salt slightly.

Tips for the Best Cornbread Mix
- Mix the dry ingredients well. Whisk everything together thoroughly so the baking powder, salt, and cornstarch are evenly distributed throughout the mix.
- Store it in an airtight container. Keeping the mix sealed helps protect the ingredients and keeps it fresh until you are ready to bake.
- Label the container. Add the date and baking instructions to the container so you always know when it was made and how to use it.
- Do not overmix the batter. When you are ready to make cornbread, stir the wet and dry ingredients together just until combined. A few lumps are okay and will help keep the cornbread tender.
- Let the melted butter cool slightly. Let the butter cool for a few minutes before mixing it with the egg and milk so it blends smoothly into the batter.

FAQs
Can I use this mix to make muffins?
Yes. This mix makes excellent cornbread muffins. Divide the batter among a greased or lined standard 12-cup muffin tin, filling each cup about two-thirds full. You’ll get 10–12 muffins. Bake at 400°F for 15–18 minutes, or until the tops are golden and a toothpick comes out with a few moist crumbs.
How do I use the homemade cornbread mix?
Whisk one batch of the dry mix with 1 large egg, ½ cup milk, and ¼ cup melted butter until just combined. Pour into a greased 8×8-inch pan or a muffin tin and bake as directed.
Can I make the mix ahead of time?
Absolutely. That’s the whole point! Mix the dry ingredients and store them until you’re ready to bake. Then just add the wet ingredients for fresh cornbread anytime.
Can I double or triple the mix?
Yes. This recipe scales easily. Make a double or triple batch and store the extra in an airtight container.
How does this compare to Jiffy?
This homemade mix has a more pronounced corn flavor, a softer texture thanks to the cornstarch, and no additives. It’s also less sweet than Jiffy, which many people prefer.

How to Store Cornbread Mix
One of my favorite things about homemade cornbread mix is that it’s always ready whenever I want fresh cornbread.
Dry Mix: Store the cornbread mix in an airtight container in a cool, dry place for up to 6 months.
Freezer: For even longer storage, freeze the dry mix in an airtight, freezer-safe container for up to 1 year. Let it come to room temperature before using.
Baked Cornbread: Store at room temperature for up to 2 days or in the refrigerator for up to 5 days. Freeze tightly wrapped for up to 3 months.
