Ingredients

Vanilla Pudding Mix

  • 1 cup (200 g) granulated sugar
  • ¾ cup (90 g) non-fat dry milk powder
  • ¾ cup (96 g) cornstarch
  • ½ teaspoon kosher salt

To Make Vanilla Pudding

  • ½ cup homemade Vanilla Pudding Mix
  • 2 cups (480 ml) whole milk
  • 1 tablespoon unsalted butter
  • 2 teaspoons vanilla extract

Instructions

Vanilla Pudding Mix

  • In a large bowl, whisk together the sugar, powdered milk, cornstarch, and salt until evenly combined and no lumps remain.
  • Store the pudding mix in an airtight container or mason jar in a cool, dry place for up to 3 to 4 months.
  • This recipe makes about 2 ½ cups of dry vanilla pudding mix, which is enough for about 5 batches of homemade vanilla pudding.

To Make Vanilla Pudding

  • In a medium saucepan, whisk together ½ cup of the pudding mix and the milk until smooth.
  • Cook over medium heat, whisking constantly, until the mixture comes to a boil. Reduce the heat to low and continue cooking for 2 to 3 minutes, or until thickened.
  • Remove from the heat and stir in the butter and vanilla extract.
  • Pour into individual serving dishes or a prepared pie crust. Place plastic wrap directly on the surface of the pudding to prevent a skin from forming.
  • Refrigerate for at least 2 hours, or until chilled and set.
