Pastry
- 2 sheets frozen puff pastry, thawed according to package directions
- ½ cup (56.5 g) mozzarella cheese, shredded
- 1 large egg, beaten
- ¼ cup (25 g) parmesan cheese, grated
Compound Butter
- To a medium bowl, add the butter, rosemary, thyme, salt and bacon. Stir to combine. Set aside while you prepare the pastry 
Pastry
- Preheat oven to 350°F. Line a large baking sheet with parchment paper. 
- Place one sheet of puff pastry onto the prepared baking sheet. 
- Spread the butter mixture in a triangular tree shape over the puff pastry. 
- Sprinkle the mozzarella over the butter mixture. 
- Place the second puff pastry sheet on top. Gently press the pastry sheet down to feel where the outline of the tree shaped butter and cheese is. Using a sharp knife, carefully cut along the edges of the tree shape. Remove the excess pastry. 
- Leaving about 2 inches in the center of the tree intact for the "trunk", carefully cut horizontal strips up the tree on both sides of the "trunk" (about 2 inches wide). These strips will be the "branches". 
- Carefully twist each "branch" of pastry away from you about 2-3 times.  
- Brush the pastry with the beaten egg. Sprinkle the parmesan cheese over the pastry.  
- Bake for 18-22 minutes, or until golden brown.
