Enjoy a quick, no-bake single-serve S’mores Scotcheroo! Made in a mug with marshmallow, chocolate, butterscotch, peanut butter, and graham crackers, this microwave dessert is ready in minutes.
In a 12-ounce microwave-safe mug, combine granulated sugar and light corn syrup. Stir with a small spoon until well mixed.
Microwave the mixture for 30 seconds, or until the sugar is mostly dissolved.
Add peanut butter to the mug and stir until smooth and fully combined.
Stir in the crispy rice cereal until everything is evenly coated. The mixture will be sticky. Continue folding gently until combined.
Transfer the mixture onto a small plate. Use your hands or the back of a spoon to shape it into a cookie-like round, pressing gently to hold its form.
While the cookie is still warm, top with marshmallow fluff, spreading it into an even layer.
Wipe out the mug with a paper towel. Add butterscotch chips and milk chocolate chips to the mug. Microwave in 30-second increments, stirring well after each, until fully melted and smooth.
Pour the melted chocolate mixture over the marshmallow layer and gently spread it across the top with the back of a spoon.
Immediately sprinkle crushed graham crackers over the chocolate layer.
Serve immediately. Or, refrigerate for 10–15 minutes to allow the chocolate to set.

*You can also use Special K, but it does end up breaking due to the stirring in the mug.
