- 2 large eggs, room temperature
- ½ cup milk
- 1 teaspoon cinnamon
- 4 ounces cream cheese, softened
- 2 tablespoons confectioners' sugar
- 2 tablespoons strawberry jam
- 8 fresh strawberries, rinsed, hulled, and thinly sliced
- 8 slices Texas toast, lightly toasted in toaster
- 3 tablespoons butter
- confectioners' sugar, for dusting
- whipped topping, for topping (optional)
In a medium bowl whisk together the eggs, milk, and cinnamon. Set aside.
In a separate medium bowl, combine cream cheese, confectioners' sugar, and strawberry jam. Mix well until creamy.
Spread the cream cheese mixture evenly over 8 slices of lightly toasted bread.
Top 4 slices of toast with strawberries, and then place the remaining slices of toast on top, cream cheese side down.
Heat a large skillet over medium heat. Add butter.
While the butter is melting, dip the sandwiches in the egg mixture, carefully coating both sides.
Add the sandwiches to the skillet and cook for 3-4 minutes, or until golden brown. Flip and cook an additional 3-4 minutes.
Dust with confectioners' sugar and top with whipped topping. Serve immediately.
