Peanut Butter and Jelly French Toast

- 4 large eggs, room temperature
- 1 ¼ cups (306 g) whole milk
- 2 tablespoons granulated sugar
- 2 teaspoons pure vanilla extract
- 1 teaspoon cinnamon, adding more or less to taste
- ⅛ teaspoon kosher salt
- 12 slices brioche bread
- ¾ cup (193.5 g) creamy peanut butter
- ¼ cup (80 g) raspberry jam, or your favorite flavor
Optional Toppings
- maple syrup
- creamy peanut butter, melted
- fresh fruit
Heat a griddle to 350°F to 375°F, greasing it if necessary.
In a shallow bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt until smooth.
Spread 2 tablespoons of creamy peanut butter onto 6 slices of brioche. Spread 2 teaspoons of jam onto the remaining 6 slices of brioche.
Assemble 6 sandwiches by pairing a slice spread with peanut butter with a slice spread with jelly.
Dip each sandwich into the egg mixture, ensuring all sides are coated but not soaked. Place the coated sandwich on the griddle and cook for 2-4 minutes on each side, or until golden brown.
Serve with your favorite toppings like maple syrup, creamy peanut butter, or fresh fruit.
