Peanut Butter and Jelly French Toast

Peanut Butter and Jelly French Toast are sandwiches made on brioche bread, dipped into a rich egg mixture, and cooked until golden brown. It's an upgrade on classic French toast that is delicious right off the griddle! Or, add some of your favorite toppings like peanut butter or fresh fruit.

Ingredients

  • 4 large eggs, room temperature
  • 1 ¼ cups (306 g) whole milk
  • 2 tablespoons granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon, adding more or less to taste
  • teaspoon kosher salt
  • 12 slices brioche bread
  • ¾ cup (193.5 g) creamy peanut butter
  • ¼ cup (80 g) raspberry jam, or your favorite flavor

Optional Toppings

  • maple syrup
  • creamy peanut butter, melted
  • fresh fruit

Instructions

  • Heat a griddle to 350°F to 375°F, greasing it if necessary.
  • In a shallow bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt until smooth.
  • Spread 2 tablespoons of creamy peanut butter onto 6 slices of brioche. Spread 2 teaspoons of jam onto the remaining 6 slices of brioche.
  • Assemble 6 sandwiches by pairing a slice spread with peanut butter with a slice spread with jelly.
  • Dip each sandwich into the egg mixture, ensuring all sides are coated but not soaked. Place the coated sandwich on the griddle and cook for 2-4 minutes on each side, or until golden brown.
  • Serve with your favorite toppings like maple syrup, creamy peanut butter, or fresh fruit.
