Ingredients & Substitutions
- Butter: Butter (I prefer unsalted) adds moisture, flavor, and richness to these bars. Make sure it’s at room temperature so it blends smoothly with the other ingredients This helps create that soft, creamy cookie texture we love. Using salted butter? You can reduce or skip the added salt in the recipe to keep the balance just right.
- Brown Sugar: Light brown sugar is the secret to soft, chewy bars with deep, caramel-like flavor. It adds extra moisture and richness that granulated sugar just can’t match, perfect for creating that gooey texture in these chocolate chip toffee fudge bars. Plus, it pairs beautifully with the hot fudge and toffee bits for an extra indulgent bite.
- Chocolate Chips: I used semi-sweet chocolate chips in these chocolate chip toffee fudge bars, but feel free to make them your own! You can swap in milk chocolate chips, white chocolate chips, peanut butter chips, or mix and match your favorite candy chip flavors. It’s an easy way to customize these gooey cookie bars to your taste.
- Hot Fudge: Hot fudge adds a rich, gooey layer that takes these bars to the next level. It’s thick, and chocolatey, and melts beautifully into the cookie dough for a truly decadent bite. Make sure to warm the hot fudge before spreading—it helps it glide into every nook and cranny so you get a little bit in every bite! - Toffee Bits: Look for toffee bits that are not coated in chocolate. (Although those would be delicious, too!) I used Heath Bits O’ Brickle. Sprinkle them on top of the warm bars, immediately after removing them from the oven.

Can I Make The Cookie Dough Ahead Of Time?
Yes! You can prepare the cookie dough in advance to save time. Once fully mixed, wrap it tightly in plastic wrap or place it in an airtight container and refrigerate for up to 2–3 days. When you’re ready to bake, let the dough sit at room temperature for 15–20 minutes to soften and make it easier to press and shape.
Can I Use Store-Bought Cookie Dough for Chocolate Chip Toffee Fudge Bars?
Yes, store-bought cookie dough can be used as a shortcut. Choose a dough that’s similar in texture to the homemade version, preferably one with chocolate chips already mixed in. Press half of the dough into the pan as the base, then proceed with the hot fudge and toffee layers as directed. For the top layer, form small discs from the remaining dough. Keep in mind that the texture and flavor might vary slightly from scratch-made dough, but it’s a convenient option when short on time.

How To Store Chocolate Chip Toffee Fudge Bars
Allow the bars to cool completely before storing. Keep them in an airtight container at room temperature for up to 3 days. For longer storage, you can refrigerate them for up to a week. But, if refrigerating the bars, bring them to room temperature before serving for the best texture.
Can I Freeze Chocolate Chip Toffee Fudge Bars?
Yes, you can freeze chocolate chip toffee fudge bars. After the bars have cooled completely, wrap them tightly in plastic wrap or aluminum foil, then place them in an airtight freezer-safe container or zip-top freezer bag. They can be frozen for up to 2 months. When you’re ready to enjoy, thaw the bars overnight in the refrigerator and bring them to room temperature before serving for the best texture and flavor.

Chocolate Chip Toffee Fudge Bars
Ingredients
- 1 cup (2 sticks / 227 g) unsalted butter, room temperature
- 1 ½ cups (300 g) light brown sugar, packed
- 1 teaspoon vanilla
- 2 large eggs, room temperature
- 2 ¼ cups (282 g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 cups (364 g) semi-sweet chocolate chips
- 1 jar (11 ounces) hot fudge, warm
- 1 cup (160 g) Heath Bits O' Brickle English Toffee Bits
Instructions
- Preheat oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
- To a large bowl, add butter, brown sugar, and vanilla. Using a hand-held mixer, cream ingredients until light and fluffy.
- Add eggs one at a time, mixing until fully incorporated.
- Add the flour, baking soda, and salt. Mix at low speed until combined.
- Mix in the chocolate chips.
- Press half of the cookie dough into the prepared baking dish in an even layer. Set the remaining cookie dough aside.
- Bake for 15 minutes.
- Carefully remove the cookie bars from the oven and place on a heat-safe surface.
- Pour the warmed hot fudge over the bars, making sure to get it into every nook and cranny.
- Using the remaining cookie dough, form small discs and place them over the top of the fudge. It is okay if there is some fudge showing through.
- Bake for an additional 20-22 minutes, or until the fudge is bubbling and the cookie dough on top is golden brown.
- After removing the bars from the oven, sprinkle the toffee bits evenly on top.
- Allow bars to cool to room temperature (about 1 ½ hours) before cutting and serving.
