Blueberry Citrus Cake

Cook Time 35 minutes

I know its fall, but I wanted to make one last summer inspired cake!

Ingredients

  • 1 box lemon cake
  • 1 tablespoon orange zest
  • 1 tablespoon lemon zest
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1/3 cup oil
  • 3 eggs
  • 1 1/2 cups fresh blueberries

Instructions

  • Heat oven to 350 and prepare two 8-in round cake pans.
  • In mixer, combine cake mix, orange zest, lemon zest, orange juice, water, oil, and eggs on low for 30 seconds. Increase speed to medium and mix for a couple minutes. Remove bowl from mixer and carefully fold in blueberries.
  • Pour batter into pans and bake for 30-35 minutes or until an inserted toothpick comes out clean.

For the frosting I just threw together some confectioners sugar, some of my leftover zest, and milk. I know I liked the final result!

Throw some fresh blueberries on top and call it a day.ย  ๐Ÿ™‚

  2. Beautiful cake..and I am always interested in how your lovely baked items are displayed. I love beautiful silver and interesting plates and cake stands. I love the silver fork in this picture. My Mom collected antique silver forks, spoons and knives. She recently passed away and I have inherited so many of them. As a tribute to her, when I make a pretty cake or dessert I will place one of her silver items in the picture of my creation. The fork in your photo reminded me of her….sweet and lovely.

  4. In the summer I love to make a fruit cobbler and serve it with homemade vanilla whip cream. I have made peach, raspberry, blueberry, and blackberry cobblers..sometimes mixing fruit and sometimes using just one. So yummy warm, but I also love it the next day cold out of the fridge!
