There is no need to travel to the Tropics to enjoy this cocktail. (Although, that sounds fabulous right now…) This Tropical Champagne Cocktail will make you feel like you are on a beach somewhere without a care in the world. It is a refreshing adult beverage that is perfect for a hot summer day.

Tropical Champagne Cocktail Ingredients

If you love coconut rum and pineapple juice, you will love this drink!

Coconut Rum: I used Malibou Coconut Rum in this drink. It is a coconut-flavored, white rum-based liqueur. There are other brands of coconut rum you could use as well.

Pineapple Juice: Of course, we can’t forget about using the juice of a tropical fruit for this tropical drink!

Grenadine: Grenadine is a non-alcoholic syrup used in cocktails. It is made from pomegranate juice in a similar method to making simple syrup. It is a nice red color to add to drinks. You could also use pomegranate molasses or pomegranate juice as a substitute.

Prosecco: Prosecco is a sparkling white wine made from Glera grapes. You could substitute champagne in the drink, but champagne is made from different grapes.

Garnish: Top the drink off with a few maraschino cherries to add a pop of color and flavor.

Tropical Champagne Cocktail is a refreshing alcoholic drink made with coconut rum, pineapple juice, grenadine, and prosecco.

Ingredients

  • ice
  • 2 ounces coconut rum
  • 4 ounces pineapple juice
  • 1 ounce grenadine
  • Prosecco, enough to top off the drink
  • maraschino cherries, for garnish

Instructions

  • In a large wine glass filled with ice, add the rum, pineapple juice, and grenadine.
  • Top the drink off with Prosecco. Stir to mix.
  • Serve immediately, garnished with maraschino cherries (optional).

  2. Yes, how would you make a large quantity.. to fit in gallon pitcher? Having a bridal brunch in August and this sounds so refreshing.. also, can you make before and put in refrigerator to chill?
