Ingredients & Substitutions
Oats: I love the texture of old-fashioned oats, also known as rolled oats. They have a nice, hearty texture that works well in these bars. You could use quick oats, but it may affect the texture.
Butter: Using unsalted butter gives you the most control over salt added to recipes. If using salted butter, you may want to lessen the amount of salt added.
Raspberry Jam: Part of what makes this recipe so simple (but delicious) is the use of raspberry jam. The jam is spread over the bottom layer of the crumble. Raspberry preserves will also work.
Can I Use Other Kinds Of Jam?
Absolutely! These bars are so easy to make, that it would be a tasty experiment to try them with other flavors. Some popular alternatives to raspberry jam could be strawberry, blueberry, blackberry, apricot, or a mixed berry jam, just to name a few.
Do Raspberry Oatmeal Crumble Bars Have To Cool Completely Before Cutting?
Yes. Be sure you give the bars time to cool completely before cutting and serving, about 30-45 minutes. This helps the raspberry oatmeal crumble bars to set for easy and neat cutting. Cutting them too soon may result in the bars falling apart or crumbling.
How To Store Raspberry Oatmeal Crumble Bars
Once cooled completely, raspberry oatmeal crumble bars can be stored at room temperature, in the refrigerator, or the freezer for longer storage. If storing at room temperature, keep them in an airtight container for up to 3-4 days. If refrigerated, they will last up to 5 days or so. Or, freeze the bars in a freezer-safe container for up to 2-3 months.
Raspberry Oatmeal Crumble Bars
Ingredients
- 1 cup (125 g) all-purpose flour
- 1 cup (90 g) old-fashioned oats
- ยฝ cup (100 g) light brown sugar, packed
- ยผ teaspoon baking soda
- โ teaspoon kosher salt
- ยฝ cup (1 stick / 113 g) unsalted butter, melted
- ยพ cup (240 g) raspberry jam
Instructions
- Preheat oven to 350ยฐF. Line an 8×8-inch baking dish with parchment paper. Set aside.
- To a medium bowl, add flour, oats, brown sugar, baking soda, and salt. Mix well.
- Pour the melted butter over the dry ingredients. Using a fork or pastry cutter, mix the butter into the dry ingredients until the mixture becomes crumbly and resembles coarse crumbs. Make sure there are no large clumps of dry ingredients remaining.
- Firmly press โ of the oat mixture into an even layer in the bottom of the prepared pan.
- Carefully spread the jam on top of the crust. Sprinkle the remaining oat mixture evenly over the raspberry jam layer, covering it completely.
- Bake for 30-35 minutes, or until the edges are golden brown. Let the bars cool before cutting and serving.
