Fruit Pizza Recipe

What Goes on Fruit Pizza?

Simply put, any fruit that you love or that is in season! During the holidays we love to change things up a bit and make all red & green or all pink and purple fruits for Valentine’s Day.

I started by chopping strawberries into slices. I did not use the small end pieces, I just created a snack bowl for the kids with those.

The clementines were peeled and separated, then I was on to kiwi. I peeled them, sliced in half the long way, then into half-moon shapes.

The blueberries and blackberries were the easiest, as I just washed and then placed on the pizza.

You could add pineapple for the yellow or even banana, but banana browns quickly so you will want to serve immediately.

How to Make Fruit Pizza

I decided to add a special twist to the traditional Fruit Pizza and made my sugar cookie base DOUBLE thick. (Simply by doubling the recipe below) It’s almost like a slice of cake! You could also double the cream cheese filling if you wanted but be prepared for some messy kid fingers. ๐Ÿ˜‰

Honey Fruit Pizza

While the kids ooohed and aahed over the Rainbow Fruit Pizza, the Honey Glazed Fruit Pizza was my favorite.

How to Make the Honey Glazed Fruit Pizza

Easy Honey Fruit Pizza

Simply wash the fruit, then cut into whatever shape you want. I quartered the strawberries, peeled and separated the clementine’s, peeled the kiwi and cut into half-moon shapes, and then just washed the blueberries and blackberries.

Not only was the fruit gorgeous, but so flavorful! I couldn’t help myself and was sneaking bites while preparing the pizza.

The next step is my favorite as you really get to see all that glorious fruit come to life.

Honey Glazed Fruit Pizza

I added about 1/4 cup of honey to all the fruit in a bowl and gently stirred. Then I simply poured the fruit over the baked and frosted sugar cookie. I recommend serving immediately, but it can be stored in the refrigerator for a couple of hours if needed.

This pizza crust was much thinner but just as lovely. All that glistening fruit really makes your mouth water!

I have to tell you, this is an amazing sugar cookie recipe. Feel free to save it and keep for your upcoming fall baking and Christmas cookies!

Fruit Pizza (Two Ways!)

Ingredients

Sugar Cookie Crust for Rainbow Fruit Pizza

  • ยฝ cup (1 stick or 113g) unsalted butter
  • ยฝ cup (100g) granulated sugar
  • 1 teaspoon Vanilla Extract
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 ยฝ cup all-purpose flour

Cream Cheese Spread

  • 8 oz cream cheese, room temperature
  • 8 oz whipped topping
  • ยผ cup confectioner’s sugar
  • 1 teaspoon Vanilla Extract

Fruit for Rainbow Fruit Pizza

  • 2 cup strawberries, rinsed
  • 3 or 4 clementine’s
  • 3 or 4 kiwis
  • 1 cup blueberries, rinsed
  • 1 cup blackberries, rinsed

Instructions

Sugar Cookie for Honey Fruit Pizza

  • Preheat oven to 350ยฐ F.
  • In the bowl of your stand mixer (or hand-held mixer) cream butter and sugar until smooth, about 3 minutes.
  • With the mixer on low, slowly add in the egg and vanilla extract.
  • Turn the mixer off and add in the baking powder and flour. Mix on medium-low until the ingredients are incorporated. The dough will be very firm.
  • Turn out the dough onto a pizza pan (or round cookie sheet) that has been lined with parchment paper.
  • Add another piece of parchment over the dough and roll to about ยฝ inch thickness using a rolling pin.
  • Try to maintain a circle shape with the dough.
  • Bake for 8-12 minutes. (Baking times may vary, just make sure the edges do not burn.) Let coolย completely before frosting.

Cream Cheese Spread

  • In a medium bowl, mix the cream cheese, confectioners sugar, and vanilla extract. When the cream cheese mixture is smooth, fold in the whipped topping by hand.
  • Smooth over the cooled sugar cookie as evenly as possible. (A small offset spatula works great for this.)

  • Cut the fruit based on the Fruit Pizza style you choose. (Instructions for Rainbow Fruit Pizza and Honey Glazed Fruit Pizza above.)

    1. You may be able to, but I have not tested that method so can’t verify. I got a pizza pan at Walmart for $1.99, so I know they can be inexpensive! ๐Ÿ™‚

  6. I love this for desert when I entertain, but use ready to roll pie crust and pre bake it before the filling. It is not as sweet and diet watchers love it.

  7. I’d like to know if the top piece of parchment paper is to be removed before baking? It may seem like a dumb question but parchment paper has never been used in my baking.

  8. I used to make this on occasion when my kids were little. I sometimes made it with a rice krispie crust.
