This cake is completely inspired by Jamie’s Heath Bar Cupcakes. The second I saw them I wanted to make them into a cake! And it was definitely a labor of love.

Course: Dessert
Cuisine: American
Keyword: chocolate cake
Servings: 8 servings
Author: Amanda Rettke
  • 1 3/4 c all-purpose flour
  • 2 tsp. pure vanilla extract
  • 2 extra-large eggs at room temperature
  • 1/2 c vegetable oil
  • 1 c buttermilk
  • 1 tsp. kosher salt
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • 3/4 c good unsweetened cocoa powder
  • 2 c sugar
  • 1 c freshly brewed hot coffee I use decaf
  1. Heat oven to 350. Prepare two 8-inch round cake pans.
  2. Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl and mix until combined.
  3. In another bowl, combine the buttermilk, oil, eggs, and vanilla.
  4. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula. Pour the batter into the prepared pans (it will be very thin) and bake for 35 to 40 minutes, until a cake tester comes out clean.

  5. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely

Heath Bar Cake with Chocolate Ganache and Vanilla Buttercream!

Heath Bar Cake

Heath is one of my favorite candy bars, so adding it to a cake seemed like a natural progression. I love the buttery crisp bits sprinkled on top and how they add a soft butterscotch flavor to the rich caramel cake and ganache. This is just one heckuva great cake!

Just looking at that cake with the sweet vanilla buttercream covered in rich chocolate ganache lovingly sprinkled with buttery Heath chips… it just makes me happy.  It’s perfection.

Chocolate Heath Cake

This is my favorite chocolate cake recipe.

This cake was truly inspirational.  It sounds weird to say it… but I felt so happy and full of life and joy while preparing it!!

The whole experience was so inspiring that I actually made a little video!  This video is more for fun than anything, but you will also get the general idea how I assembled the cake.

You’re right! This cake is so Jamie!! And I am loving your video – cake decorating scares the pants off of me, so seeing how calm the whole process can be (which it never seems to be for me, lol) is very reassuring! What a perfect cake for the baby shower!!

Oh my word! This is a cake recipe that I’ve been making for years! My favorite cake to make with it is a layer cake with a raspberry liquor creme between the layers and a chocolate buttercream on the outside. It is incredible!

    • Amanda says:

Your addition of raspberry liquor sounds heavenly!

  • Carrie D. says:

WOW! This looks amazing!! May I ask where you got your pipping bag and tips from? They look like nice quality!!

    • Amanda says:

      I believe I got them from bakeitpretty.com!

  • Marlene Mueller says:

Hi Amanda. This Heath Bar cake looks fabulous. After looking at the video and reading the recipe, I was wondering if you made a larger amount of ganache. Your cake looks like it has pretty much on it, and the recipe for the ganache only called for 4 oz. of chocolate along with the other ingredients. This doesn’t seem like it would make enough to make the cake look as delicious as yours. Would so appreciate if you could clear this up for me. Thanks.

    • Amanda says:

You have a quick mind Marlene! I actually DID double the ganache recipe, but then ended up only using half. Therefore I didn’t offer up that adjustment in my notes. Have a blessed day!

  • Betsy | JavaCupcake.com says:

What a super fun, simple way to dress up a chocolate cake! LOVE IT! And… that picture at the end of the post of the single piece of cake… it made me want to jump through my screen and eat it for breakfast! YUM!

    • Amanda says:

      lol Thanks sweet Betsy!!

  • Joe says:

My God! this looks awesome. I have a friend with a 1yr anniversary coming up and would love to present this cake. My question is, is the cream made from the butter milk, eggs, and veg. oil? Also, what chocolate topping (and how to create) did you use?

Thank you so much for your post!

    • Amanda says:

Thanks Joe! There is a link above that says Heath Bar Cupcakes… if you click that there is a complete recipe! 🙂
