Oatmeal Brownie Milky Way Bars
I love oatmeal bars. I love brownies. Oh, and I love Milky Way candy bars, too! So, it only makes sense to combine three of my favorite things to make one very likeable, and yummy, dessert bar!
Bar Ingredients
There are two parts to this recipeโthe chocolate caramel filling and the oatmeal brownie layer.
Candy Bars: I chose original Milky Way candy bars to melt with the caramel for some added chocolate to the filling.
Caramel: The easiest caramels to use in the filling is caramel bits. They are ready to go with no unwrapping of plastic necessary.
Oatmeal: I used Old-Fashioned oats in my recipe but you can certainly use quick oats. We love oatmeal so love the consistency, texture, and flavor that an old-fashioned rolled oat adds.
Milky Way Filling
To make the ooey-gooey chocolate and caramel filling for these bars, get out a medium saucepan. Add the candy bars, caramels, and heavy cream to the saucepan. Simmer over medium to medium-low heat until fully melted. Remove the saucepan from the heat and let the mixture cool for about ten minutes.
Oatmeal Brownie Mixture
To make the oatmeal brownie crumble, first, in a large bowl, combine the oats, flour, baking soda, salt, brown sugar, and butter. Use or fork or your hands (I prefer just using my hands) to combine the ingredients. It is okay if the butter isn’t completely broken down, but keep the pieces to the size of a pea. Next, add in the brownie mix, egg, and oil. Stir until just combined.
Assembling Oatmeal Brownie Milky Way Bars
Once the Milky Way and caramel filling has cooled and the oatmeal brownie crumble is mixed, it’s time to get the layers in the pan and the bars baked! First, be sure to line the pan with parchment paper or use nonstick cooking spray. Next, evenly spread half of the oatmeal brownie mixture into the prepared baking dish. Press it firmly to flatten.
After the bottom layer is pressed in the pan, pour the cooled Milky Way mixture on top. Make sure the filling gets all the way out to the corners and covers the bottom layer. Finally, place the remaining oatmeal mixture on top.
The easiest way to do this is to grab a small amount of the mixture, flatten it a bit in your hands, and place it on top of the filling. Continue to do this with the rest of the crumble, like putting together pieces of a puzzle. It is okay if some of the filling is showing. Bake the bars for 25-30 minutes. Remove from the oven and set pan on a cooling rack to cool before cutting and serving. Add a dollop of vanilla ice cream on top and enjoy!
Oatmeal Brownie Milky Way Bars
Ingredients
Milky Way Filling
- 2 Milky Way (1.84 ounces each) candy bars
- 1 bag (11 ounces) caramel bits
- ยฝ cup heavy cream
Oatmeal Brownie Mixture
- 2 cups old fashioned oats
- 2 cups (250 g) all-purpose flour
- ยพ teaspoon baking soda
- 1 teaspoon kosher salt
- 1 cup (200g) light brown sugar, packed
- 1 ยผ cups ( 2ยฝ sticks / 283.5 g) butter, room temperature
- 2 cups brownie mix, store-bought or prepacked
- 1 large egg, room temperature
- โ cup canola oil
Instructions
- Preheat oven to 350ยฐF. Line a 9×13-inch baking dish with parchment paper or spray with nonstick cooking spray. Set aside.
Milky Way Filling
- In a medium saucepan over medium to medium-low heat, place Milky Way bars, caramels, and heavy cream. Let simmer until fully melted. Remove from heat and let coolย for approximately ten minutes.
Oatmeal Brownie Mixture
- In a large bowl, combine oats, flour, baking soda, salt, brown sugar, and butter. Use a fork or your hands to combine. It's okay if there are some chunks of butter, but no larger than a pea.
- Add in brownie mix, egg, and oil. Stir until just combined.
Assembly
- When ready, spread half of the oat mixture into the prepared baking dish. Press firmly to flatten.
- Pour the melted and cooled Milky Way and caramel mixture over the oat mixture. Make sure to get all the way to the corners.
- Top with remaining oat mixture. To do this, break apart the remaining mixture in your hands, flatten each piece a bit, and piece together over the caramel mixture. It's okay if a little caramel is showing.
- Bake 25-30 minutes. Let cool before cutting and serving.

I can’t wait to make these! Quick question… you said you added 6 milky ways, but in the recipe it only says to add 2 milky ways and use a bag of caramels. Which is correct for your version of the recipe (which is definitely the one I want to make. You just put Martha to shame)? Thank you!
Oh my, these sound delicious! What pray tell, is brownie mix? I live in Norway and make all my goodies from scratch…my brownies have solid chocolate and butter, flour, etc in the mix. Suggestions on how to substitute?
Another tweek? How about leaving out the caramel and using Mars bars instead of milky way…………..perfect caramel, milky way fondant and chocolate all in one bar! Now I need to eat.
