Strawberry Mousse Brownies are fudgy brownies topped with a creamy homemade strawberry cheesecake mousse. Both the brownies and mousse stand on their own. But together, they create a dessert that combines chocolatey goodness and sweet strawberries for an indulgent treat! If you want a double dose of chocolate, I also have Chocolate Mousse Brownies you will love!
Mousse Brownies Ingredients & Smart Substitutions
Brownies: This go-to brownie recipe is fudgy, moist, and rich. If you prefer, you can use a boxed brownie mixโsimply follow the package instructions and let the brownies cool completely before adding the mousse. And be sure you make them in the same pan as I did; I love this one from Amazon that comes in 3 different sizes!
Cornstarch: Adding cornstarch to the brownie recipe helps give the brownies a soft, chewy, and fudgy texture.
Cocoa Powder: Dutch-processed cocoa powder is recommended for a smooth flavor and rich color. Regular unsweetened cocoa powder can be used but may alter the taste and texture slightly. (And will appear lighter in color.)
Strawberry Cheesecake Mousse: The strawberry cheesecake mousse that tops the brownies can be a dessert on its own! It is a super creamy mousse that gives you the flavors of a strawberry cheesecake in a mousse. Then, try my Easy Cheesecake Mousse and add your favorite flavors.
Can I Make Strawberry Mousse Brownies Ahead Of Time?
Yes, you can prepare both the brownies and mousse ahead of time!
- Brownies: Bake and cool the brownies, then store them in an airtight container at room temperature for up to 2-3 days.
- Mousse: Prepare the mousse and store it in the refrigerator for up to 2-3 days. Stir before spreading over the brownies.
Note: Making each part in advance might tempt you to enjoy them separately before assembly!
How To Store Strawberry Mousse Brownies
Because of the mousse topping, it’s best to store the strawberry mousse brownies in the refrigerator. Carefully cover the brownies in the pan with plastic wrap. They will last up to 2-3 days.
Can I Freeze These Brownies?
Yes, you can freeze these brownies. Freeze the brownies with the mousse topping for 1-2 hours to set, then wrap for long-term storage. Thaw in the refrigerator overnight to maintain the mousseโs texture.
