Cranberries in Snow

Cranberries in Snow is a festive dessert that will be a perfect addition to any holiday menu! The tartness from the cranberries is perfectly complemented by the sweet whipped cream cheese topping. And, the vibrant red color of the jello is gorgeous underneath the stark white topping (like a little mound of freshly driven snow). Top the dessert with sugared cranberries to really show it off!

Ingredients & Substitutions

Cranberries: You will need both cranberry juice and cranberries for this dessert. When it comes to cranberries, fresh or frozen will work. If using frozen berries, let them thaw first.

Jello Mix: I used cherry jello mix, but you could also use cranberry jello mix for even more cranberry flavor.

Pineapple: All you need is an 8-ounce can of crushed pineapples, drained. I would not recommend fresh pineapple, as it contains enzymes that could prevent the jello from setting.

Topping: The topping is cream cheese, granulated sugar, and whipped topping.

How Many Servings Does This Make?

If you look at the recipe, I stated that this made seven servings. However, that depends on how much you are serving each person. This recipe makes about 3 1/2 cups, so servings may certainly vary depending on the vessel you are using.

Can I Make this in a Different Dish?

Sure! If you don’t want to serve the cranberries in snow dessert in cocktail glasses, you can use a baking dish. I would recommend using a 9×9-inch baking dish.

Can I Make Cranberries in Snow Ahead of Time?

Yes! You can get the jello made and set. After it has been set, it will last in the refrigerator for 7-10 days, although the flavors can lessen the longer it is stored. I would wait until serving before adding the topping.

Cranberries in Snow is a jello dessert made with cranberry juice, fresh cranberries, cherry jello mix, and crushed pineapples, served with cream cheese whipped topping.

Ingredients

Jello

  • 1 cup cranberry juice
  • cups cranberries, fresh or frozen (thawed, if using frozen)
  • 1 box (6 ounces) cherry jello mix
  • cups (250 g) granulated sugar
  • 1 can (8 ounces) crushed pineapple, drained

Topping

  • 4 ounces cream cheese, room temperature
  • cup (67 g) granulated sugar
  • cups whipped topping

Instructions

Jello

  • In a medium saucepan over medium heat, add cranberry juice. Bring the juice to a boil.
  • Add the cranberries to the juice and again, bring to a boil. Cook for 5-7 minutes, or until the berries burst.
  • Remove the pan from the heat. Add the cherry jello mix, sugar, and crushed pineapples to the cranberry mixture. Stir until both the jello mix and sugar dissolve. This will make about 3½ cups total.
  • Pour the mixture evenly between dessert cups. I added ½ cup of the jello mixture to each cup. (Depending on your serving size, the number of servings may vary.)
  • Allow the jello mixture to chill in the refrigerator overnight, about 12 hours, or until slightly firm.

Topping

  • To a large mixing bowl, add the cream cheese and sugar. Using a hand mixer on medium-high speed, beat the cream cheese and sugar together until fully incorporated.
  • Gently fold in the whipped topping.
  • Top each dessert cup evenly with a large dollop of the whipped topping mixture.
  • Serve immediately. Or, store in the refrigerator until ready to enjoy.

    1. This should still work… there is no actual cherry in cherry jello, just artificial flavors. You could always experiment with other flavors or just use plain gelatin.

  1. I make this with a twist on the topping
    I use 1 container cool whip.i package Cream cheese and 1 jar of marshmallow creme. And sprinkle top with crushed almonds. My family loves it
