This amazing treat is based on my One-Minute Single Serving Scotcheroo! A Sโ€™mores Scotcheroo is a quick, no-bake treat made in a mug with crispy rice cereal, creamy peanut butter, marshmallow fluff, melted chocolate, and graham cracker crumbs. It gives you all that classic sโ€™mores flavor, ready in minutes!

Ingredients & Substitutions

  • Base: Mixing sugar and corn syrup makes a sweet, sticky glue that holds everything together and gives the Scotcheroo its chewy bite.
  • Peanut Butter: Creamy peanut butter adds rich flavor and helps the cereal stick together. Crunchy peanut butter works too if you like more texture.
  • Crispy Rice Cereal: Use crispy rice cereal, like Rice Krispies, for that light crunch Scotcheroos are famous for. You can also use Special K, but itโ€™s a little harder to stir in and can break into smaller pieces.
  • Marshmallow Fluff: The marshmallow fluff gives that sweet, marshmallow flavor found in a classic Sโ€™more. Also called marshmallow creme, itโ€™s a sticky, fluffy treat. If you donโ€™t have any, you can even make your own! I used it in my Peanut Butter S’mores Sandwich Cookies, too.
  • Butterscotch and Chocolate Chips: The butterscotch and chocolate chips make a sweet, melty topping that covers the marshmallow layer. You can use all chocolate chips if you like, or try peanut butter chips, white chocolate, or even a mix, whatever you have on hand!
  • Graham Cracker Crumbs: The crushed graham crackers on top give that classic Sโ€™mores crunch and flavor. You can use store-bought crumbs or crush your own crackers at home. Either way, it finishes the treat perfectly!

Can I Make This Without Corn Syrup?

Yes! Corn syrup helps make Scotcheroos smooth and chewy, but you can use honey, brown rice syrup, or even maple syrup instead. Honey will make it a little softer, and maple syrup adds a tiny maple flavor. Just know the texture and taste might be a little different.

Can I Use Regular Marshmallows Instead of Marshmallow Fluff?

Yes! Chop or tear regular marshmallows and melt them before spreading on your Scotcheroo. The flavor stays the same, though the texture will be a bit less smooth than using marshmallow fluff.

How To Store A Single-Serve S’mores Scotcheroo

If youโ€™re not eating it right away, store your single-serve Sโ€™mores Scotcheroo in an airtight container or wrap it tightly and place it in the refrigerator for up to 2 days. Let it sit at room temperature for a few minutes before enjoying, so the chocolate softens. While itโ€™s best fresh, it holds up well for a little longer!

Enjoy a quick, no-bake single-serve Sโ€™mores Scotcheroo! Made in a mug with marshmallow, chocolate, butterscotch, peanut butter, and graham crackers, this microwave dessert is ready in minutes.

Ingredients

  • 1 tablespoon granulated sugar
  • 1 ยฝ tablespoons light corn syrup
  • 1 ยฝ tablespoons creamy peanut butter
  • ยฝ cup crispy rice cereal*
  • 1 ยฝ tablespoons marshmallow fluff
  • 1 tablespoon butterscotch chips
  • 1 tablespoon milk chocolate chips
  • 1 tablespoon crushed graham crackers

Instructions

  • In a 12-ounce microwave-safe mug, combine granulated sugar and light corn syrup. Stir with a small spoon until well mixed.
  • Microwave the mixture for 30 seconds, or until the sugar is mostly dissolved.
  • Add peanut butter to the mug and stir until smooth and fully combined.
  • Stir in the crispy rice cereal until everything is evenly coated. The mixture will be sticky. Continue folding gently until combined.
  • Transfer the mixture onto a small plate. Use your hands or the back of a spoon to shape it into a cookie-like round, pressing gently to hold its form.
  • While the cookie is still warm, top with marshmallow fluff, spreading it into an even layer.
  • Wipe out the mug with a paper towel. Add butterscotch chips and milk chocolate chips to the mug. Microwave in 30-second increments, stirring well after each, until fully melted and smooth.
  • Pour the melted chocolate mixture over the marshmallow layer and gently spread it across the top with the back of a spoon.
  • Immediately sprinkle crushed graham crackers over the chocolate layer.
  • Serve immediately. Or, refrigerate for 10โ€“15 minutes to allow the chocolate to set.

Notes

*You can also use Special K, but it does end up breaking due to the stirring in the mug.
