- ½ cup (1 stick / 113 g) unsalted butter
- 2 teaspoons heavy cream, room temperature
- ½ cup (100 g) light brown sugar, packed
- 1 teaspoon vanilla extract

- Preheat the oven to 325°F. Lightly spray a 10×15-inch sheet pan with nonstick cooking spray. Set aside.
- In a large bowl, using a hand mixer on medium speed, beat the sugar, oil, vanilla, and eggs until well combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the diced apples.
- Pour the batter into the prepared pan and spread it into an even layer.
